Before you start

Before starting, ensure the slow cooker insert is clean and dry. Prepare the cauliflower by washing it thoroughly and cutting it into uniform, bite-sized florets; uniform pieces are essential for even cooking. Ensure the pork chops are patted dry with paper towels, which helps the seasonings adhere better.

Have all ingredients measured and ready to go, as the assembly process is very quick. If the slow cooker has a ceramic insert, ensure it is at room temperature before adding ingredients to avoid thermal shock, although most modern inserts are designed for this.

Ingredients at a glance (4)
  • 4 boneless pork chops
  • 1 head cauliflower florets
  • 1 tsp garlic powder
  • 1 can (10.5 oz) cheddar cheese soup

Instructions

Preparation and Layering

  1. Assemble the Ingredients
Place the boneless pork chops into the bottom of the slow cooker insert. Arrange the cauliflower florets evenly over the top of the pork chops.
Look for Ensure the pork is in a single layer at the bottom for even cooking.
Tip If the pork chops are of uneven thickness, try to place the thicker pieces toward the edges of the slow cooker.

The pork chops should be arranged in a single layer at the bottom of the slow cooker. The cauliflower florets should be piled on top, filling the space without being packed too tightly, which allows the heat to circulate properly and ensures that the steam can cook the vegetables evenly alongside the pork.

Seasoning and Sauce Application

  1. Season and Add Sauce
Sprinkle the garlic powder evenly over the cauliflower and pork. Spoon the cheddar cheese soup over the entire mixture, ensuring it is distributed to help coat the ingredients as it melts.
Look for The soup should be spread across the top surface to allow it to melt down through the layers.
Tip Using a rubber spatula helps to get all the soup out of the can and spread it evenly.

The garlic powder should be sprinkled evenly across the cauliflower to ensure every piece is seasoned. The cheddar cheese soup should be spooned over the top, covering the ingredients as much as possible. It does not need to be mixed in at this stage, as it will melt and flow downwards during the cooking process.

Slow Cooking and Resting

  1. Slow Cook and Serve
Cover the slow cooker and cook on low for 4 to 6 hours. Before serving, verify that the pork chops have reached an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius). Allow the meat to rest for at least 5 minutes before serving to ensure the best texture.
Look for The pork should be tender and easily pierced with a fork, and the sauce will be smooth and creamy.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check the internal temperature in the thickest part of the chop to ensure it is cooked through safely.

After the allotted cooking time, the sauce should be thick and creamy, and the pork should reach the required internal temperature. Once the heat is turned off, the meat must rest for 5 minutes. The final dish will look cohesive, with the pork and cauliflower well-integrated into the smooth, orange cheese sauce.

Common mistakes

A common mistake is overcrowding the slow cooker or using pieces of meat that are too thin, which can lead to overcooking and a dry texture. Another error is failing to ensure the pork is at the bottom, which is necessary for it to cook properly in the juices.

Avoid lifting the lid frequently during the cooking process, as this releases heat and moisture, significantly extending the cooking time and potentially affecting the final texture of the vegetables.

Finally, ensure the cauliflower is cut into consistent sizes to prevent some pieces from becoming mushy while others remain undercooked.

How to tell it’s done

To determine if the pork chops are done, insert a meat thermometer into the thickest part of the chop. The internal temperature must reach 145 degrees Fahrenheit (63 degrees Celsius). At this stage, the pork should be tender and opaque throughout.

The cauliflower should be soft but still hold its shape, and the cheddar sauce should be bubbling and thick, coating the ingredients evenly. Always allow the pork to rest for at least 5 minutes before serving, as this allows the juices to redistribute, ensuring a tender and succulent final product.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
