Tips for success

To add a bit of heat to this dish, you can stir in a teaspoon of crushed red pepper flakes or a dash of hot sauce along with the smoked paprika. This provides a nice contrast to the sweetness of the cream soda. If you prefer a more complex flavor, consider adding a finely minced clove of garlic or a teaspoon of onion powder to the mix before you start the slow cooker.

The sauce can be adjusted after the pork is shredded. If it seems too thin, you can remove the lid for the final 30 minutes of cooking or transfer the sauce to a small saucepan and simmer it over medium heat until it thickens to your liking.

This creates a more concentrated glaze that clings better to the meat, enhancing the overall presentation and flavor of your pulled pork.

Variations

  • Spicy Cream Soda Pork: Add two chopped jalapeños and a tablespoon of chili powder to the slow cooker for a spicy kick that cuts through the sweetness of the cream soda.
  • Root Beer Alternative: Replace the cream soda with root beer for a deeper, earthier flavor profile that pairs exceptionally well with classic molasses-based barbecue sauces.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Cool to room temperature within 2 hours before refrigerating.
Freezer
Freeze in airtight containers for up to 3 months. Thaw completely in the refrigerator before reheating.
Reheat
Reheat gently on the stovetop or in a microwave, adding a splash of water or sauce to maintain moisture.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Ensure the pork has cooled to room temperature, but do not let it sit out for more than 2 hours before refrigerating. When reheating, add a small splash of water or extra barbecue sauce to prevent the meat from drying out, and heat gently on the stovetop or in the microwave until warmed through.

This recipe is excellent for making ahead, as the flavors often deepen after sitting in the refrigerator overnight. You can cook the pork, shred it, and store it in its sauce for up to 3 days before serving.

It also freezes exceptionally well, making it a perfect option for meal prepping; simply portion it into freezer-safe bags or containers and thaw in the refrigerator before reheating.

Serving ideas

Serve the pulled pork piled high on toasted brioche buns with a side of coleslaw for a classic sandwich experience. The crunch of the fresh slaw complements the tender meat perfectly.

Alternatively, you can serve the pork over a bed of creamy mashed potatoes, steamed rice, or even as a topping for baked potatoes. It is a versatile dish that pairs well with a variety of sides, allowing you to customize your meal based on your preferences.

For a lighter serving option, consider using the pulled pork as a filling for lettuce wraps or as a topping for a crisp green salad. The sweetness of the pork works well with tangy vinaigrettes and crunchy vegetables.

Regardless of how you choose to serve it, ensure you have plenty of extra barbecue sauce on the side for those who prefer a little more moisture. The simplicity of the presentation makes it an ideal centerpiece for casual gatherings.

Frequently asked questions

Can this be made in a pressure cooker?
Yes, you can adapt this for a pressure cooker. Simply use the same ingredients and cook on high pressure for about 60 minutes, followed by a natural release of pressure for 15 minutes before shredding.
Why is the pork still tough after cooking?
If the pork is still tough, it usually means it has not cooked long enough to break down the connective tissue. Continue cooking on low for another hour or until the meat pulls apart easily with a fork.
Is it possible to use a different cut of meat?
Pork shoulder is recommended for the best texture, but you can use pork loin if you prefer a leaner meat. Keep in mind that leaner cuts may require less cooking time and can become dry if overcooked.

Ingredients

  • 3 lb pork shoulder, cut into large chunks
  • 2 cups cream soda barbecue sauce (prepared or store-bought, contains milk)
  • 1 large sweet onion, sliced
  • 1 tbsp smoked paprika

Instructions

  1. Place the pork shoulder chunks into the base of the slow cooker, ensuring they are evenly distributed to allow for uniform cooking. Pour the cream soda barbecue sauce over the pork, coating every piece thoroughly to ensure the meat stays moist during the long cooking process.
  2. Scatter the sliced sweet onions over the top of the pork and sauce mixture. Sprinkle the smoked paprika evenly across the ingredients. Cover the slow cooker with its lid and set it to cook on low for 8 hours or high for 4 hours until the pork is tender.
  3. Remove the cooked pork from the slow cooker and shred it using two forks. Return the shredded meat to the sauce in the slow cooker and mix well. Ensure the internal temperature reaches at least 145°F (63°C). Let the meat rest for 5 minutes before serving to allow the juices to redistribute.
