Before you start

Before you begin, ensure your slow cooker is clean and placed on a heat-resistant surface near an electrical outlet. Gather all your ingredients, including the pre-baked turkey meatballs and fresh aromatics.

Take the turkey meatballs out of the freezer or refrigerator about 15 minutes before cooking so they are not ice-cold when they hit the pot, which helps ensure they heat through evenly. Prepare your rosemary picks by cleaning the sprigs and trimming them into small, manageable pieces for garnish.

Ingredients at a glance (7)
  • 2 lb baked herb turkey meatballs
  • 1 can whole-berry cranberry sauce
  • 1/2 cup fresh squeezed orange juice
  • 1/3 cup brown sugar
  • 2 tbsp balsamic vinegar
  • grated orange zest, for serving
  • fresh rosemary picks, for serving

Instructions

Combining the base

  1. Combine ingredients
Place the baked herb turkey meatballs into the ceramic insert of the slow cooker. Add the whole-berry cranberry sauce, fresh squeezed orange juice, brown sugar, and balsamic vinegar. Stir gently to ensure the meatballs are evenly coated with the liquid ingredients.
Look for Ensure the sugar is partially dissolved into the liquids.
Tip Use a silicone spatula to avoid scratching the ceramic insert while stirring.

At this stage, all ingredients should be evenly distributed within the slow cooker. The brown sugar should be partially incorporated into the liquid mix of cranberry sauce and orange juice.

Ensure the meatballs are fully submerged or at least partially coated in the liquid to begin the slow-cooking process effectively. Check that your slow cooker is set correctly to the low setting before covering it with the lid to begin the transformation.

Slow cooking to perfection

  1. Slow cook the meatballs
Cover the slow cooker with its lid and set to the LOW heat setting. Allow the meatballs to simmer for 3 hours. During this time, the cranberries will burst and the sauce will reduce into a thick, glossy, ruby-red glaze that coats the turkey meatballs thoroughly.
Look for The sauce appears glossy and has reduced to a thick consistency.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid frequently as this releases heat and increases the cooking time significantly.

After three hours, the transformation should be evident. The sauce should have reduced into a thick, glossy, ruby-red glaze that coats the meatballs. The cranberries will have softened and released their juices, creating a rich base. The aroma should be sweet, slightly tangy, and deeply savory. If the sauce still appears too thin, it may need a few more minutes, but generally, the mixture should look cohesive and ready to be served warm.

Final garnish and service

  1. Garnish and serve
Once the cooking time is complete and the internal temperature of the meatballs has reached at least 165°F (74°C), turn the slow cooker to the WARM setting. Sprinkle the top with fresh grated orange zest and insert small fresh rosemary picks into the meatballs before serving directly from the cooker.
Look for The aroma is bright and citrusy with the herbs.
Tip Prepare the rosemary picks by stripping the bottom leaves from the stem.

The final phase involves adding the finishing touches that elevate the dish. The fresh grated orange zest should be distributed evenly over the top to provide a bright citrus finish. The rosemary picks should be inserted firmly into the meatballs to serve as both a garnish and a convenient handle. Ensure the slow cooker is set to the warm setting to keep the meatballs at the perfect serving temperature throughout your event.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the sauce from reducing properly and result in a watery finish. Ensure your meatballs are in a single layer or just slightly piled so the heat circulates evenly.

Another error is neglecting to stir the sauce after adding the ingredients; failing to combine the brown sugar and vinegar can lead to uneven caramelization. Finally, avoid using high heat, as this can cause the sugars in the cranberry sauce to scorch on the bottom of the pot.

How to tell it’s done

The meatballs are ready when they are heated through to an internal temperature of at least 165°F (74°C). You can check this by inserting a digital meat thermometer into the center of a few meatballs.

Visually, the sauce should be deep ruby-red, glossy, and thick enough to coat the back of a spoon. The cranberries should have softened and broken down significantly, creating a cohesive, jam-like texture that clings to the surface of the turkey meatballs.

  • Poultry: 165°F (74°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
