Before you start

Before you begin, ensure your slow cooker insert is clean and dry. Take the turkey breast out of the refrigerator about 20 minutes before you are ready to start cooking to help it come to a slightly more uniform temperature.

Gather all your sauce ingredients and a sturdy measuring cup so that the process flows smoothly. If you are using a slow cooker liner for easier cleanup, insert it now before adding the turkey, as it will save significant time during the post-dinner washing phase.

Ingredients at a glance (4)
  • 2 lb boneless skinless turkey breast
  • 1 cup cranberry sauce
  • 1/2 cup honey
  • 2 tbsp hot sauce

Instructions

Glaze Preparation

  1. Prepare the Glaze
Combine the cranberry sauce, honey, and hot sauce in a medium mixing bowl. Stir the mixture until the ingredients are well incorporated and the sauce reaches a smooth, pourable consistency ready for the turkey.
Look for The sauce should be uniform in color and texture.
Tip Whisk vigorously to break up any large chunks of cranberry sauce.

The sauce should be a deep, vibrant color with a smooth consistency. Ensure all ingredients are thoroughly combined so the flavors are balanced.

If the sauce is too thick, you can add a tablespoon of water, though the juices from the turkey usually thin it sufficiently during the cooking process. Check that your slow cooker is plugged in and ready.

Slow Cooking

  1. Slow Cook the Turkey
Place the turkey breast roast into the insert of your slow cooker. Pour the prepared cranberry hot honey sauce evenly over the top of the turkey until it is completely coated. Cover and cook on low for 4 hours until the turkey is cooked through to 165°F (74°C).
Look for The turkey should be opaque and tender throughout.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the turkey is centered so the sauce pools correctly around it.

The turkey should be submerged or well-coated in the sauce. As it cooks, you will notice the aroma of the cranberry and honey filling the kitchen. The turkey will become very tender and the sauce will begin to reduce and glaze the meat. Ensure the lid stays securely closed throughout this phase to maintain the internal temperature.

Resting and Slicing

  1. Slice and Serve
Remove the turkey from the slow cooker and transfer it to a cutting board. Let the meat rest for at least 10 minutes before slicing. Serve warm with the remaining sauce from the slow cooker drizzled over each slice.
Look for The juices should run clear after slicing.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a sharp carving knife to get clean, thin slices.

After resting, the turkey will be firm yet tender. The meat should slice cleanly without crumbling. The sauce left in the slow cooker should be syrupy and rich. Check the internal temperature one final time before serving to guarantee it has reached the target of 165°F (74°C). The meat should look moist and inviting.

Common mistakes

A common mistake is adding too much liquid, which can result in a thin, watery sauce that does not coat the meat well. Resist the urge to lift the lid frequently during the cooking process, as this releases heat and moisture, significantly increasing the cooking time.

Another mistake is slicing the turkey immediately after removing it from the slow cooker; failing to let it rest will cause the juices to escape, leading to dry, less flavorful meat.

How to tell it’s done

The turkey is perfectly cooked when it reaches an internal temperature of 165°F (74°C) at the thickest part. You will know it is ready when the meat is opaque throughout and pulls apart easily with a fork.

The sauce will have reduced slightly, appearing thick and glossy, clinging beautifully to the surface of the meat. Always check with a digital thermometer to ensure the center has reached the safe temperature, as slow cookers can vary in their heat intensity and cooking speed.
