Before you start

Before starting, ensure your chicken wings are thoroughly patted dry with paper towels to remove any excess surface moisture. This helps the sauce adhere better to the skin.

Have your aromatics—the garlic and ginger—prepared and ready to go. If you are using fresh ginger, peeling it with the edge of a spoon before grating makes the task quick and easy.

Organize your workspace by measuring the hoisin sauce and gathering your fresh cranberries, so the assembly process in the slow cooker is smooth and efficient. Check that your slow cooker insert is clean and properly seated in the base before you begin adding the ingredients.

Ingredients at a glance (5)
  • 3 lb chicken wings, separated into drums and flats
  • 1 1/2 cups fresh cranberries
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup hoisin sauce

Instructions

Assembly Phase

  1. Prepare the Slow Cooker
Place the raw chicken wings into the insert of a slow cooker. Arrange them so they are evenly distributed to ensure consistent cooking. Scatter the fresh cranberries over the top of the wings. Add the minced garlic and grated fresh ginger over the cranberries.
Look for The chicken wings should be packed into the bottom of the slow cooker without overcrowding.
Tip Ensure the ginger is finely grated to distribute its flavor evenly throughout the sauce.

At the end of this phase, the chicken wings should be neatly packed into the slow cooker insert, topped with an even layer of cranberries, garlic, and ginger. Everything should look ready for the sauce. Verify that the ingredients are not piled too high above the fill line of the insert to ensure even heat distribution once the lid is closed.

Saucing Phase

  1. Add the Sauce
Pour the hoisin sauce over the chicken, cranberries, and aromatics. Using a spoon or tongs, gently toss the ingredients to coat the wings thoroughly in the sauce. Cover the slow cooker with its lid.
Look for The wings should be well-coated in the thick, dark red sauce.
Tip Do not skip the mixing step, as it helps the hoisin sauce reach the bottom wings.

Once the hoisin sauce is added and the wings are tossed, the contents should appear well-coated and uniform. The dark red hue of the sauce should be visible across all the wings. Ensure that no large clumps of garlic or ginger remain and that the sauce has been distributed down to the bottom of the insert before securing the lid.

Cooking Phase

  1. Cook and Serve
Cook on the low setting for 4 hours until the chicken is tender and fully cooked. The internal temperature of the wings must reach 165°F (74°C). Once done, let the wings rest for 5 minutes before serving with the sauce and burst cranberries.
Look for The chicken skin should be soft and opaque, and the meat should pull away from the bone easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin, remove the lid for the final 30 minutes of cooking to thicken it.

The wings should look tender, with the skin having absorbed the sauce and the cranberries having burst and integrated into the glaze. The sauce should be thickened and glossy, clinging to the meat. Check that the internal temperature has reached 165°F (74°C) and that the wings are soft before you proceed to let them rest briefly before serving.

Common mistakes

A common mistake is overcrowding the slow cooker, which leads to uneven cooking and can leave some wings soggy while others are perfectly tender. Avoid lifting the lid frequently during the cooking process, as this releases heat and steam, significantly increasing the total cooking time.

Another error is failing to mix the ingredients thoroughly at the start; a quick toss ensures that the hoisin sauce and aromatics are well-distributed, preventing the sauce from clumping or burning at the bottom of the insert. Finally, do not rush the process; high heat can make the wings tough.

How to tell it’s done

The chicken wings are done when the meat is completely opaque and pulls away from the bone with very little resistance. The skin should be soft and fully saturated with the dark, thickened cranberry hoisin glaze.

Using a meat thermometer, ensure the thickest part of the wing reaches at least 165°F (74°C). If the meat still shows any signs of pink near the bone, continue cooking for another 15 to 20 minutes. The sauce should be glossy and cling to the wings rather than sitting as a thin liquid at the bottom.

  • Poultry: 165°F (74°C) in the thickest part
