Tips for success
For maximum flavor, sear the beef cubes in a hot skillet with a little oil before adding to the slow cooker. This adds a deeper, caramelized crust.
However, the video’s method is dump-and-go — no searing — and still delivers delicious results. If you have time, searing is a great upgrade, but not required.
To make your own garlic-herb butter, combine 1/2 cup softened unsalted butter with 2 minced garlic cloves, 1 teaspoon dried parsley, 1/2 teaspoon dried thyme, and a pinch of salt. Mix until smooth. This can be made ahead and stored in the fridge for up to a week or frozen for a month.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the carrots and potatoes. They will release moisture and add an earthy flavor that complements the beef and butter sauce.
- Spicy Kick: Stir 1-2 teaspoons of red pepper flakes or a minced jalapeño into the butter before adding. This adds a gentle heat that balances the richness.
- Vegetable Swap: Replace the red potatoes with cubed butternut squash or sweet potatoes. They cook similarly and add a touch of sweetness. Adjust cooking time if needed.
- Herb Boost: Add 2 sprigs of fresh rosemary and 3 sprigs of fresh thyme to the slow cooker before cooking. Remove before serving for a more pronounced herbal note.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 1-minute intervals, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld even more overnight.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much. The beef and vegetables will remain tender when reheated.
You can prep the ingredients up to a day ahead: cube the beef, quarter the potatoes, and measure the butter and au jus mix. Store them separately in the fridge.
In the morning, just layer everything in the slow cooker and turn it on. The cooking time remains the same. This makes it an excellent option for busy weekdays.
Serving ideas
Serve the beef bites and vegetables over a generous scoop of creamy mashed potatoes, spooning the buttery au jus over the top. The sauce soaks into the potatoes, making every bite rich and satisfying. For a lighter option, serve over rice, egg noodles, or with crusty bread to soak up the sauce.
Garnish with chopped fresh parsley or chives if desired, though the video keeps it simple. This dish pairs well with a simple green salad or roasted green beans to balance the richness.
It’s a complete meal in one bowl, perfect for family dinners or casual gatherings. Leftovers are just as delicious the next day.

Slow Cooker Cowboy Butter Beef Bites

Ingredients
- 2 lb beef chuck stew meat, cut into cubes
- 1 lb baby carrots
- 1 1/2 lb red bliss potatoes, quartered
- 1/2 cup garlic-herb butter (cowboy butter), softened
- 1 oz au jus mix
- creamy mashed potatoes, for serving
Instructions
- Place the cubed beef chuck in the bottom of a 6-quart slow cooker. Scatter the baby carrots and quartered red potatoes evenly over the beef. No need to stir — the layers will meld as they cook.
- Dollop the softened garlic-herb butter over the top of the meat and vegetables. Sprinkle the au jus mix evenly over everything.
- Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and the potatoes are easily pierced. Stir gently once halfway through if possible. Let it rest for 3 minutes before slicing.
- Test the beef with a fork — it should shred easily or cut with no resistance. The carrots should be tender and the potatoes soft. If not done, continue cooking for another 30 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest for at least 3 minutes before serving. This allows the juices to redistribute, keeping the meat moist.
- Spoon the beef, carrots, potatoes, and buttery au jus over creamy mashed potatoes. Serve hot, with extra sauce spooned on top.
