Tips for success
For the best flavor, use a good-quality curry powder that's fresh—spices lose their potency over time. If you want a bit of heat, add a pinch of cayenne or red pepper flakes along with the curry powder.
To make the sauce extra creamy, stir in a tablespoon of butter or a splash of heavy cream at the end, though the coconut milk already provides plenty of richness.
Serve the curry over steamed jasmine rice, quinoa, or with warm naan to soak up every drop of sauce. A squeeze of fresh lime juice and a sprinkle of cilantro would brighten the dish, but the base recipe is just as satisfying on its own.
For a heartier meal, add a can of drained chickpeas along with the chicken—they'll absorb the sauce and add protein.
Variations
- Add vegetables: Stir in 2 cups of fresh spinach or chopped kale during the last 30 minutes of cooking. The greens will wilt into the sauce, adding color and nutrients without altering the flavor.
- Make it spicy: Add 1 to 2 teaspoons of red curry paste or a minced serrano pepper along with the curry powder. Taste before serving and add more heat if desired.
- Use chicken breasts: Swap the thighs for boneless, skinless chicken breasts. Cut into 1-inch chunks and cook on low for 3 to 4 hours, checking for doneness at 3 hours to avoid overcooking.
- Add chickpeas: Drain and rinse a 15-ounce can of chickpeas and add them with the chicken. They'll absorb the sauce and add a hearty texture, making the dish even more filling.
Storage and make-ahead

Store leftover curry in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of water or coconut milk if the sauce has thickened too much.
This recipe is perfect for meal prep. Assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. You can also freeze the uncooked ingredients in a freezer-safe bag, then thaw overnight in the refrigerator before cooking.
Serving ideas
Serve this coconut curry chicken hot, straight from the slow cooker. Ladle it into shallow bowls with a generous portion of the sauce.
It pairs beautifully with steamed basmati rice, which soaks up the creamy liquid, or with warm naan for scooping. A side of sautéed greens or a simple cucumber salad would add a fresh contrast to the rich curry.
For a complete meal, offer lime wedges, chopped cilantro, and sliced green onions at the table so everyone can customize their bowl. The curry is satisfying on its own, but those bright, fresh additions take it to another level.
If you have leftovers, they make an excellent lunch the next day—the sauce clings to the chicken and sweet potatoes, and the flavors are even more developed.

Slow Cooker Coconut Curry Chicken and Sweet Potatoes

Ingredients
- 2 lb boneless skinless chicken thighs, cut into bite-size pieces
- 1 1/2 lb sweet potatoes, peeled and cubed
- 1 medium yellow onion, diced
- 2 tbsp curry powder
- 1 1/2 cups full-fat coconut milk
- 1 tsp kosher salt
Instructions
- Place the chicken pieces in the slow cooker insert. Scatter the cubed sweet potatoes and diced onion over the chicken. Sprinkle with curry powder and salt. Use a spoon to toss everything together until the chicken and vegetables are evenly coated with the spice mixture.
- Pour the coconut milk over the chicken and vegetables. Stir gently to combine, making sure the coconut milk reaches the bottom of the slow cooker. The liquid should mostly cover the ingredients, but a few pieces can peek above the surface.
- Cover the slow cooker with the lid. Cook on low for 4 to 5 hours, or until the chicken is tender and cooked through and the sweet potatoes are fork-tender. Avoid lifting the lid during cooking to keep the heat steady.
- After 4 hours, check the chicken for doneness. Insert an instant-read thermometer into a few pieces; the thickest piece should read at least 165°F (74°C). The sweet potatoes should be easily pierced with a fork. If not done, continue cooking for another 30 minutes and check again.
- Turn off the slow cooker. Stir the curry gently to redistribute the sauce. Let it sit uncovered for 5 minutes so the sauce settles. Ladle the curry into bowls and serve hot, with rice or naan if desired.
