Before you start

Before starting the recipe, ensure your workspace is clean and organized. Pat the beef chuck roast dry with paper towels to remove excess moisture, which helps in seasoning. Have your slow cooker placed on a stable surface away from the edge of the counter.

Prepare the Vidalia onions by peeling and cutting them into large, sturdy wedges. Measure out the Coca-Cola, sweet chili ketchup glaze, and Worcestershire sauce so they are ready to be added immediately. Ensure you have two clean, sturdy forks available for the shredding stage later.

Ingredients at a glance (5)
  • 3 lb beef chuck roast
  • 2 Vidalia onions, wedged
  • 355 ml classic Coca-Cola
  • 120 ml sweet chili ketchup glaze
  • 2 tbsp Worcestershire sauce

Instructions

Layering the roast

  1. Layering the slow cooker
Place the beef chuck roast into the bottom of the slow cooker ceramic insert. Arrange the wedged Vidalia onions around the beef to ensure even flavor distribution during the cooking process.
Look for The roast should sit flat at the bottom of the insert for even heat distribution.
Tip Ensure the onions are cut into thick wedges so they retain their shape during the long cooking time.

At this phase, the beef chuck roast should be nestled securely at the bottom of the slow cooker with the onion wedges arranged around it. Everything should be clean and ready for the liquid components. Ensure the roast is positioned so that it can be fully exposed to the braising environment once the liquids are added, providing a solid foundation for the long, slow cook ahead.

Adding the braise

  1. Adding the braising liquid
Pour the classic Coca-Cola, the sweet chili ketchup glaze, and the Worcestershire sauce over the beef and onions. Ensure the liquid covers the base of the meat to help the sugars penetrate the roast.
Look for The liquid should partially submerge the beef and onions.
Tip Pour the liquids slowly to avoid splashing the sides of the ceramic pot.

The slow cooker should now contain the beef, onions, and the mixture of Coca-Cola, chili ketchup glaze, and Worcestershire sauce. The liquid should be well-distributed. Ensure the lid is seated firmly on the ceramic insert to create an airtight seal. This is the crucial moment where you set the dial to low and allow the chemical transformation of the ingredients to begin uninterrupted for the next eight hours.

Shredding the beef

  1. Slow-cooking and shredding
Cover the slow cooker with the glass lid and cook on LOW for 8 hours. Once the time is up, remove the beef and shred it using two forks. Ensure the beef reaches an internal temperature of 145°F (63°C) and let it rest for at least 10 minutes before serving with the thickened cola gravy.
Look for The gravy should be bubbling and thick, and the beef should pull apart easily with minimal effort.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the gravy is too thin, you can remove the beef and simmer the liquid on high for a few minutes until it thickens further.

The beef should be incredibly tender and falling apart, with the sauce reduced to a thick, fragrant, and dark mahogany glaze. The onions should be soft and caramelized. Before shredding, verify the internal temperature of 145°F (63°C).

The meat should shred with minimal resistance, and the aroma should be rich, sweet, and savory. Once shredded, ensure the meat is thoroughly coated in the thickened gravy before plating.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent even cooking; ensure the beef has enough room to sit comfortably. Another error is checking the meat too frequently by lifting the lid, which releases essential steam and heat, significantly increasing the cooking time.

Avoid using a lean cut of beef, as it will likely turn out dry; chuck roast is ideal because of its fat content. Finally, do not rush the shredding process; if the beef is not sufficiently tender, it indicates the collagen has not yet fully converted to gelatin.

How to tell it’s done

The beef is perfectly done when it reaches an internal temperature of 145°F (63°C) and pulls apart effortlessly with the pressure of two forks. The meat should be tender, moist, and easily separated along the grain.

The surrounding gravy should have reduced into a thick, bubbling, mahogany-colored sauce that coats the back of a spoon. If the meat offers resistance when shredding, it needs more time in the slow cooker. Always let the meat rest for at least 10 minutes before serving to allow the juices to redistribute.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
