Tips for success

For the best flavor, use a good-quality pork shoulder and trim off any excess fat, but leave some for moisture. If you have time, sear the pork chunks in a hot skillet before adding them to the slow cooker – this adds a deeper, caramelized flavor. However, the recipe works perfectly without this extra step.

When pureeing the chipotle peppers, add a little of the adobo sauce to achieve a smooth consistency. The sauce can be made ahead and stored in the refrigerator for up to a week.

If you prefer a milder heat, use fewer peppers or remove the seeds before pureeing. Adjust the amount to suit your spice tolerance.

Variations

  • Spicy Mango: Swap the pineapple for mango chunks and add an extra chipotle pepper for more heat. The mango adds a tropical sweetness that pairs beautifully with the smoky chipotle.
  • Beef Barbacoa: Replace the pork with beef chuck roast and use the same pineapple-chipotle mixture. Cook until the beef is fall-apart tender, then shred and serve with the melted cheese.
  • Veggie Version: Use jackfruit or extra-firm tofu instead of pork. The jackfruit mimics the texture of shredded meat and absorbs the flavors well. Cook for 4 hours on low, then shred and serve.
  • Breakfast Style: Serve the carnitas on warm corn tortillas with a fried egg on top. The runny yolk adds richness and makes it a hearty breakfast or brunch dish.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently before serving.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The carnitas will keep well and the flavors will continue to develop.

Reheat gently in a skillet over medium heat or in the microwave until warmed through. The cheese may lose some of its gooeyness upon reheating, but the dish will still be delicious.

This recipe is ideal for meal prep. You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook on LOW as directed. The pork can also be cooked, shredded, and stored in the refrigerator for up to 4 days, or frozen for up to 3 months.

Serving ideas

Serve the carnitas over steamed Spanish rice, with a side of warm tortillas, or as a filling for tacos, burritos, or quesadillas.

Top with fresh cilantro, diced onions, a squeeze of lime, or a dollop of sour cream to balance the heat. The melted cheese from the slow cooker can be spooned over the top for extra indulgence.

For a low-carb option, serve the carnitas in lettuce cups or over a bed of shredded cabbage. The dish also works well as a topping for nachos or as a hearty filling for stuffed peppers. The possibilities are endless – the sweet, smoky, and savory flavors pair well with many sides and toppings.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, the recipe can be adapted for an Instant Pot. Sear the pork on the sauté setting, then add the remaining ingredients and cook on high pressure for 60 minutes, followed by a natural release. Shred the pork and serve as directed.
What can be used instead of Oaxaca cheese?
Oaxaca cheese can be substituted with mozzarella, Monterey Jack, or any good melting cheese. The goal is a cheese that melts smoothly and has a mild flavor. A combination of mozzarella and Monterey Jack works well.
How spicy is this dish?
The spice level is moderate, with a warm smoky heat from the chipotle peppers. To make it milder, reduce the amount of chipotle or remove the seeds. To make it spicier, add more chipotle or a pinch of cayenne pepper.
Can the pork be cooked on high instead of low?
Yes, the pork can be cooked on high for about 4-5 hours instead of 8 hours on low. The low setting yields more tender meat, but high works if time is short. Check for doneness by shredding the meat with a fork.
How should leftovers be reheated?
Reheat leftovers in a skillet over medium heat, stirring occasionally, until hot. Add a splash of water or broth if the mixture seems dry. Alternatively, microwave in 30-second intervals, stirring between each, until heated through.

Slow-Cooker Chipotle Pineapple Pork Carnitas

Prep 10 minCook 8 hTotal 8 h 10 minServes 6
Slow cooker filled with shredded pork carnitas topped with melted cheese and pineapple

Ingredients

  • 3 lb boneless pork shoulder, cut into 1-inch chunks
  • 20 oz pineapple tidbits in juice, drained
  • 1/2 cup chipotle peppers in adobo sauce, pureed
  • 8 oz Oaxaca cheese, shredded
  • 8 oz Mexican four-cheese blend, shredded

Instructions

  1. Place the pork shoulder chunks in the bottom of a 6-quart slow cooker in an even layer. They should cover the bottom of the insert completely.
  2. Scatter the drained pineapple tidbits over the pork. Spoon the pureed chipotle peppers in adobo sauce over the pineapple and pork, spreading it as evenly as possible.
  3. Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend evenly over the top of the pork mixture. The cheese will melt and create a blanket as it cooks.
  4. Cover the slow cooker and cook on LOW for 8 hours, or until the pork is fork-tender and easily shreds. The cheese will melt into a golden, blistered blanket. Let it rest for 3 minutes before slicing.
  5. Using two forks, shred the pork directly in the slow cooker. Stir to combine with the pineapple and chipotle sauce, and let it rest for at least 3 minutes before serving.
  6. Serve the carnitas hot, spooned over rice or tucked into warm tortillas. Top with the melted cheese from the slow cooker and any extra sauce.
