Tips for success
For the best flavor, sear the pork chunks in a hot skillet before adding them to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
If you skip this step, the dish will still be delicious, but searing adds complexity. Also, consider using fresh pineapple tidbits instead of canned for a brighter, more acidic flavor—just reduce the amount of liquid slightly.
To make the sauce extra thick, whisk a tablespoon of cornstarch with a little cold water and stir it into the slow cooker during the last 30 minutes. This will give the sauce a glossy, rich texture.
If you prefer a spicier dish, add an extra chipotle pepper or a pinch of cayenne. For a milder version, use only the adobo sauce and skip the peppers themselves.
Variations
- Chicken Version: Substitute boneless, skinless chicken thighs for the pork. Cook on low for 4 to 5 hours until the chicken shreds easily. The cooking time is shorter, so check for doneness at 4 hours.
- Mild Version: Reduce the chipotle peppers to 1 tablespoon and add 1 teaspoon smoked paprika for smoky flavor without the heat. You can also remove the seeds from the chipotle peppers before mincing.
- Beef Version: Use beef chuck roast cut into chunks instead of pork. Cook on low for 8 to 10 hours until fork-tender. The beef will have a richer flavor that pairs well with the chipotle and pineapple.
- Add Beans: Stir in a can of drained black beans during the last 30 minutes of cooking. This adds protein and fiber, making the dish more substantial and stretching it further.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce may thicken; add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat, or in the microwave in 30-second intervals, adding a splash of liquid if needed.
Store leftover carnitas in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools.
Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed to loosen the sauce. The flavors continue to meld overnight, making leftovers even better.
You can assemble the raw ingredients in the slow cooker insert the night before and store it in the refrigerator. In the morning, place the insert in the slow cooker and cook as directed. This makes the recipe truly dump-and-go. Alternatively, cook the full recipe and freeze portions for later.
Serving ideas
Serve the carnitas in warm flour tortillas with your favorite toppings like shredded lettuce, diced tomatoes, or a squeeze of lime. The creamy sauce pairs well with a fresh pico de gallo or a dollop of guacamole. For a low-carb option, serve over cauliflower rice or a bed of greens.
This dish also makes excellent burrito bowls—layer rice, carnitas, black beans, corn, and a drizzle of the sauce. For a party, set up a taco bar with all the fixings and let guests build their own.
The carnitas are hearty enough to be the star of the meal, but they also work well as a filling for enchiladas or quesadillas.

Crockpot Chipotle Pineapple Pork Carnitas

Ingredients
- 3 lb pork shoulder, cut into chunks
- 1 can (20 oz) pineapple tidbits in juice, drained
- 2 tbsp chipotle peppers in adobo sauce, minced
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
- warm flour tortillas, for serving
Instructions
- Place the pork shoulder chunks in the slow cooker insert. Add the drained pineapple tidbits and the minced chipotle peppers in adobo sauce. Stir gently to coat the pork with the pineapple and chipotle.
- Dollop the sour cream over the pork mixture. Sprinkle the shredded Monterey Jack cheese evenly over the top. Do not stir; the cheese will melt into the sauce as it cooks.
- Cover the slow cooker and cook on low for 8 to 10 hours, or until the pork is fork-tender and easily shreds. Do not open the lid during cooking except to check near the end. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Using two forks, shred the pork directly in the pot. Stir the shredded pork into the sauce so every piece is coated. Let rest for 10 minutes before serving.
- Spoon the carnitas onto warm flour tortillas. Add extra sauce from the slow cooker if desired. Serve immediately.
