Tips for success

To enhance the flavor, consider letting the chicken rest in the sauce for an extra 10 minutes after shredding before serving. This allows the meat to absorb even more of the chipotle peach barbecue sauce, resulting in a more intense flavor in every bite. If you prefer a spicier dish, you can stir in a small amount of finely minced fresh chipotle pepper or a dash of hot sauce during the final shredding phase to kick up the heat level to your personal liking.

For a more complete meal, serve the shredded chicken over a bed of fluffy white rice, inside warmed flour tortillas for easy tacos, or on toasted brioche buns for a classic pulled chicken sandwich experience.

Adding a side of crunchy coleslaw or a fresh green salad provides a nice textural contrast to the tender, saucy chicken. These additions not only round out the meal but also complement the sweet and smoky flavor profile of the chipotle peach barbecue sauce perfectly.

Variations

  • Spicy Chipotle Peach: Increase the heat by adding two finely minced chipotle peppers in adobo sauce to the slow cooker at the beginning of the cooking process.
  • Peach and Herb: For a fresher flavor, add a tablespoon of fresh thyme or rosemary when adding the sauce, which complements the sweetness of the peaches beautifully.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Cool to room temperature for no more than 2 hours before refrigerating.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating thoroughly until steaming hot.
Reheat
Reheat in the microwave in 30-second intervals or in a saucepan over medium heat, stirring occasionally until the chicken is hot and the sauce is bubbling.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Ensure the chicken has cooled completely to room temperature before placing it in the fridge, but do not leave it out for longer than 2 hours. This prevents the growth of bacteria and ensures the quality of the dish remains high. When storing, keep the chicken submerged in any remaining sauce to prevent the meat from drying out, which also helps maintain its flavor over the next few days.

You can prepare the chicken ahead of time by cooking it fully and allowing it to cool completely before portioning it into containers. It can be kept in the refrigerator for up to 3 days or frozen for up to 2 months.

This makes it an excellent option for meal prepping, as the flavors often develop and deepen even further after sitting in the refrigerator overnight. Simply reheat the desired portion when you are ready to eat, adding a little extra sauce if needed to keep it moist.

Serving ideas

Serve the chicken warm, directly from the slow cooker for a casual dinner, or portion it out onto individual plates. If serving as a main dish, it pairs exceptionally well with sides that can soak up the extra sauce, such as mashed potatoes, buttery corn on the cob, or a simple batch of cornbread.

The combination of the sweet peach and smoky chipotle creates a versatile flavor profile that works well with both traditional barbecue sides and lighter, more contemporary vegetable-based dishes.

When presenting the dish, consider garnishing with a sprinkle of chopped fresh cilantro or thinly sliced green onions for a pop of color and freshness.

If you are serving this for a gathering, setting up a build-your-own taco or slider bar allows guests to customize their portions with various toppings like pickled red onions, avocado slices, or a dollop of sour cream. This interactive serving style is perfect for casual entertaining and ensures that everyone can enjoy the chicken exactly how they prefer it.

Frequently asked questions

Can this recipe be made with chicken breasts instead of thighs?
Yes, boneless chicken breasts can be used, but note that they cook faster and are more prone to drying out. Reduce the cooking time by 1 to 2 hours and check for doneness early to ensure the chicken remains juicy.
Is it necessary to brown the chicken before putting it in the slow cooker?
Browning is not required for this recipe. The slow cooking method allows the chicken to become tender and flavorful without the need for prior searing, keeping the preparation process as simple and quick as possible.
Why does the sauce seem too thin at the end of the cooking time?
If the sauce is thinner than desired, remove the chicken and simmer the sauce in a saucepan on the stovetop over medium-high heat for 5 to 10 minutes until it reduces to your preferred consistency. Then return the shredded chicken to the thickened sauce.
