Before you start

Before beginning, ensure the chicken is properly thawed and patted dry with paper towels to remove excess moisture. Clear your workspace and ensure the slow cooker is plugged into a dedicated outlet. Have the sliced onions, taco seasoning packet, and lime juice broth ready to go.

Remember to wash your hands thoroughly after handling raw poultry and sanitize any surfaces that came into contact with the raw meat, including the cutting board and the measuring cup used for the broth.

Ingredients at a glance (4)
  • 1 whole chicken (about 4 lbs)
  • 1 cup sliced red onion
  • 1 packet taco seasoning
  • 1 cup lime juice broth

Instructions

Assembling the ingredients

  1. Prepare the slow cooker
Place the raw whole chicken into the base of the slow cooker. Scatter the sliced red onions evenly over and around the chicken. This creates a flavorful aromatic bed for the bird as it slow cooks.
Look for Chicken is centered in the base of the slow cooker
Tip Ensure the chicken is fully thawed before placing it in the slow cooker to ensure even cooking.

The chicken should be nestled securely in the bottom of the slow cooker. The red onions should be scattered evenly to ensure they cook down into the broth. Everything should be arranged cleanly in the crockpot, ready for the seasoning and liquid to be added. Check that the slow cooker is clean and the cord is safely positioned away from heat sources.

Seasoning and simmering

  1. Season and add liquid
Sprinkle the taco seasoning packet generously over the chicken and onions. Pour the lime juice broth over the top of the chicken. Cover the slow cooker with the lid to lock in the moisture and flavors.
Look for Seasoning is evenly distributed and liquid is poured over the chicken
Tip Do not stir the ingredients after adding the liquid, as the steam will distribute the flavors during the cooking process.

The taco seasoning should be distributed evenly over the chicken, and the lime juice broth should be poured around the base. The lid must be placed securely on the slow cooker to create the necessary seal. The kitchen should begin to smell of citrus and warm spices as the cooking process begins. Ensure the slow cooker is set to the correct heat setting for your timeline.

Final shredding and serving

  1. Cook and serve
Cook the chicken on high for 4 hours or on low for 7 to 8 hours until the meat reaches an internal temperature of 165°F (74°C). Once cooked, carefully remove the chicken to a platter, shred the meat, and let it rest for 10 minutes before serving with the juices.
Look for Meat is tender and easily pulls away from the bone
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer inserted into the thickest part of the thigh, avoiding the bone, to verify the safe temperature.

The chicken should be extremely tender, with the skin pulling away easily from the meat. The onions should be translucent and soft, having incorporated into the lime-infused juices.

The meat should be easily shredded with two forks, showing a consistent texture. Check the internal temperature one final time before removing the chicken from the slow cooker to ensure it has reached the required 165°F (74°C).

Common mistakes

A common mistake is overcrowding the slow cooker, which prevents even cooking and can lead to undercooked spots. Another frequent error is removing the lid too often during the cooking process, which releases essential steam and increases total cooking time.

Avoid using frozen chicken, as it poses a significant food safety risk in a slow cooker. Finally, failing to check the internal temperature with a thermometer can lead to overcooked, dry chicken, so always rely on the temperature rather than just the clock.

How to tell it’s done

The chicken is fully cooked when it reaches an internal temperature of 165°F (74°C) at the thickest part of the thigh, away from the bone. The juices should run clear when the meat is pierced with a knife, and the chicken should appear opaque throughout.

If the meat is not tender enough to shred with two forks, it requires additional cooking time. Always allow the chicken to rest for at least 10 minutes to let the juices redistribute throughout the meat, ensuring maximum tenderness.

  • Poultry: 165°F (74°C) in the thickest part
