Before you start

Before beginning, ensure that your workspace is clean and organized. Prepare the chicken by patting it dry with paper towels. If you are using frozen chicken, ensure it is completely thawed in the refrigerator before adding it to the slow cooker to maintain food safety.

Have your measuring cup ready for the broth and ensure your seasoning packet is easily accessible. Clear enough space on your countertop to accommodate the slow cooker and any utensils you will need for shredding the chicken once the cooking process is complete.

Ingredients at a glance (4)
  • 2 lb boneless skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 packet fajita seasoning
  • 1 cup chicken broth

Instructions

Preparation and assembly

  1. Assemble ingredients
Place the raw chicken breasts into the bottom of the slow cooker insert. Evenly scatter the drained black beans over the chicken. Sprinkle the entire packet of fajita seasoning over the chicken and beans, then pour the chicken broth over the top of the mixture.
Look for ensure the chicken is in a single layer if possible
Tip pour the broth slowly to avoid washing away the seasoning

At the end of this phase, all ingredients should be properly layered in the slow cooker. The chicken should be at the bottom, covered by the beans, seasoning, and broth. Ensure that the seasoning is evenly distributed across the chicken to avoid concentrated pockets of spice. The slow cooker should be set to the appropriate heat level, and the lid should be securely in place to begin the slow-cooking process, creating the necessary environment for the flavors to meld.

Slow cooking process

  1. Cook the chicken
Cover the slow cooker and cook on high for 4 hours or low for 6 to 8 hours. The chicken is finished when it reaches an internal temperature of 165°F (74°C) and shreds easily with two forks. Allow the chicken to rest for at least 5 minutes before serving.
Look for the chicken should be tender and easily pulled apart
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip check the internal temperature with a meat thermometer

During this phase, the chicken will gradually reach the necessary internal temperature. The aromas will become more pronounced as the spices infuse the broth and the chicken. Monitor the progress by checking the texture of the chicken toward the end of the recommended cooking time.

Ensure the slow cooker remains closed, as this is critical for maintaining the consistent temperature required to safely and effectively cook the poultry through to the desired level of tenderness.

Shredding and final assembly

  1. Shred and serve
Once cooked, use two forks to shred the chicken directly in the slow cooker, incorporating the beans and the flavorful liquid. Serve the mixture into individual bowls while hot. The combination of the juices and the seasoning creates a natural sauce that coats the chicken perfectly.
Look for the mixture should be well combined and steaming
Tip adjust the consistency of the sauce by leaving the lid off for a few minutes if desired

Once the chicken reaches 165°F (74°C), the final phase involves shredding. The chicken should pull apart with ease, blending seamlessly with the beans and the reduced broth. The consistency should be moist and flavorful. Check that the mixture is heated through and ready for serving. This is the moment to adjust the texture if necessary by stirring, ensuring all ingredients are well-incorporated before transferring the finished dish into individual bowls for service.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking. Ensure the chicken is arranged in a single layer or slightly overlapping to allow proper heat circulation.

Another error is removing the lid too frequently during the cooking process; every time the lid is opened, heat escapes, significantly increasing the total cooking time. Finally, avoid using high-sodium broths if you are sensitive to salt, as the seasoning packet already contains a substantial amount of sodium; adjust accordingly.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) on a meat thermometer. Visually, the chicken should no longer be pink in the center, and it should offer no resistance when pulled apart with two forks.

If the chicken still feels firm or tough, continue cooking for an additional 20 to 30 minutes. The beans should be heated through and tender, and the liquid in the bottom of the slow cooker should appear slightly thickened from the seasoning and juices.

  • Poultry: 165°F (74°C) in the thickest part
