Before you start

Before starting, remove the bavette steak from the refrigerator and let it sit at room temperature for up to 30 minutes while you prepare the other ingredients. Smash the garlic cloves and measure the red wine vinegar, crushed red pepper, and butter.

If using homemade chimichurri, have it ready—you'll need 1/2 cup. Toast the ciabatta rolls just before serving, so they stay crisp. Set up your slow cooker and have the lid ready.

Ingredients at a glance (7)
  • 3 lb bavette steak
  • 8 garlic cloves, smashed
  • 1/2 cup red wine vinegar
  • 1 tsp crushed red pepper
  • 1 stick salted butter
  • 1/2 cup fresh parsley-oregano chimichurri
  • 6 crusty ciabatta rolls, toasted

Instructions

Phase 1: Layer and Cook

  1. Layer the Crockpot
Place the bavette steak into the slow cooker. Add the smashed garlic cloves, red wine vinegar, crushed red pepper, and the stick of salted butter. Turn the steak to coat it with the vinegar and seasonings. Let it rest for 3 minutes before slicing.
Look for The butter will sit on top of the steak, ready to melt during cooking.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the steak is very long, cut it into two or three pieces to fit the slow cooker.
  2. Cook on Low
Cover the slow cooker and cook on LOW for 7 hours, until the steak is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
Look for The meat will be deeply tender and the liquid will be fragrant with garlic and vinegar.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not open the lid during cooking—each time releases heat and extends cooking time.

After layering the steak with garlic, vinegar, red pepper, and butter, the slow cooker should smell fragrant and garlicky as it heats. The butter will melt and mingle with the vinegar, creating a savory liquid.

At the end of the 7-hour cook, the meat should be visibly tender, and the liquid should be rich and aromatic. Do not rush this phase—low and slow is key.

Phase 2: Shred and Mix

  1. Shred the Steak
Using two forks, shred the steak directly in the slow cooker, mixing it with the garlic-butter jus. The meat should pull apart easily into juicy strands. Let it rest for 3 minutes before slicing.
Look for The shreds will be moist and coated with the buttery, garlicky liquid.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Remove any large pieces of fat or gristle as you shred.
  2. Fold in Chimichurri
Add the fresh parsley-oregano chimichurri to the shredded steak and fold gently until well combined. The chimichurri will brighten the meat with fresh herbs and a hint of tang. Let it rest for 3 minutes before slicing.
Look for The steak will turn vibrant green with flecks of parsley and oregano.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Reserve a little chimichurri for drizzling on top of the sandwiches if desired.

When you shred the steak, it should separate into long, juicy strands with little effort. The garlic cloves will have softened and can be mashed into the meat. After folding in the chimichurri, the mixture will be speckled with green and smell wonderfully fresh. The jus should coat the meat without pooling excessively. Taste and adjust seasoning if needed.

Phase 3: Assemble and Serve

  1. Toast the Rolls
Split the ciabatta rolls and toast them until golden and crusty, either in a toaster or under the broiler for 1-2 minutes.
Look for The rolls will be crisp on the outside and soft inside.
Tip Broiling gives a deeper toast—watch carefully to avoid burning.
  2. Assemble the Sandwiches
Pile the chimichurri steak generously onto the bottom halves of the toasted rolls. Spoon any extra jus over the meat and add more chimichurri on top if you like. Close the sandwiches and serve warm.
Look for The meat will be juicy and the rolls will hold up without getting soggy.
Tip Serve with extra chimichurri on the side for those who want more zing.

The toasted rolls should be golden and crisp, ready to hold the juicy steak. When you pile the meat onto the rolls, the juices will soak into the bread slightly, making each bite deliciously messy. The chimichurri on top adds a final burst of freshness. Serve the sandwiches immediately, while the rolls are still crisp and the meat is warm.

Common mistakes

Avoid lifting the slow cooker lid during cooking, as this releases heat and can extend the cooking time. Do not skip the resting period after cooking—it helps the meat retain moisture. When shredding, use two forks and work gently to avoid turning the meat into mush.

Also, be sure to fold the chimichurri in just before serving; adding it too early can cause the herbs to lose their bright color and flavor. Overloading the rolls with too much jus can make them soggy, so spoon it on judiciously.

How to tell it’s done

The steak is done when it is fork-tender and pulls apart easily with little resistance. The internal temperature should reach at least 145°F (63°C) for food safety, but because it is cooked for 7 hours on low, it will be well beyond that and extremely tender.

Let the meat rest for at least 3 minutes before shredding to allow the juices to redistribute. The chimichurri should be vibrant green and the rolls toasted to a golden brown.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
