Tips for success
To get the most flavor from the chili-lime butter, use a good-quality unsalted butter – the fat carries the seasonings and coats the seafood beautifully. If you like heat, add a pinch of cayenne or a sliced jalapeño to the butter before pouring.
For a deeper flavor, brown the butter in a saucepan before adding the seasoning, then proceed with the recipe. The browning adds a nutty richness that complements the sweetness of the crab.
When serving, spoon a little extra butter from the slow cooker over each portion – it's the best part. Serve with crusty bread or steamed jasmine rice to soak up the sauce.
If you have leftover butter, it can be strained and refrigerated for up to a week; use it to brush over grilled seafood or toss with pasta. The recipe is forgiving – feel free to adjust the amount of chili-lime seasoning to suit your taste.
Variations
- Spicy Andouille Boil: Add 2 sliced jalapeños and 1 tsp cayenne pepper to the chili-lime butter for an extra kick. Use hot smoked Andouille sausage and serve with pickled okra on the side.
- Citrus Herb Boil: Replace chili-lime seasoning with 2 tbsp fresh lime zest, 1 tbsp lemon zest, and 1/4 cup chopped parsley. Add 2 minced garlic cloves to the butter for a brighter, herbaceous flavor.
- Cajun Style: Swap chili-lime seasoning for 2 tbsp Cajun seasoning and add 1 tsp smoked paprika. Use andouille and baby red potatoes, and serve with hot sauce on the table.
- Garlic Butter Boil: Melt the butter with 4 minced garlic cloves and 1 tsp garlic powder. Omit the chili-lime seasoning and add 1 tbsp lemon juice at the end for a rich, garlicky sauce.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a covered skillet over low heat with a splash of water or extra butter to prevent drying. Avoid microwaving on high, as it can make the shrimp rubbery. The flavors will meld further overnight, making the leftovers even more delicious.
The chili-lime butter can be made up to 3 days ahead and stored in the refrigerator. Reheat gently before pouring over the seafood.
The sausage and potatoes can also be prepped a day in advance – slice the sausage and halve the potatoes, then refrigerate in separate containers. The seafood should be added fresh on the day of cooking to ensure best texture and safety.
Serving ideas
Serve this seafood boil directly from the slow cooker set on warm, allowing guests to help themselves. Provide small bowls for the shells and plenty of napkins.
Lemon wedges are essential – the bright acidity cuts through the rich butter and enhances the sweetness of the crab and shrimp. For a complete meal, offer steamed jasmine rice or crusty bread to soak up every last drop of the chili-lime butter.
This dish is a showstopper at casual gatherings. Pair it with a crisp green salad or grilled corn on the cob for a summery feel. The buttery, spicy, and tangy flavors are balanced by the mild rice. For a low-carb option, serve the seafood over cauliflower rice or simply on its own. The leftovers can be turned into a seafood pasta or a hearty chowder the next day.

Slow-Cooker Chili Lime Seafood Boil

Ingredients
- 2 lb snow crab clusters
- 2 lb raw jumbo shrimp, peeled and deveined
- 1 lb smoked Andouille sausage, sliced into coins
- 1 1/2 lb baby potatoes, halved
- 1 cup unsalted butter, melted
- 2 tbsp chili-lime seasoning
- 1/2 cup fresh cilantro, chopped
Instructions
- Place the snow crab clusters and raw jumbo shrimp into the bottom of a 6-quart slow cooker. Scatter the sliced Andouille sausage coins and halved baby potatoes over the seafood, distributing them evenly.
- In a small saucepan, melt the butter over low heat. Stir in the chili-lime seasoning until fully combined. Remove from heat and stir in the chopped cilantro.
- Pour the warm chili-lime butter evenly over the seafood and vegetables in the slow cooker. Do not stir.
- Cover the slow cooker and cook on low for 4 hours, or until the shrimp are pink and opaque and the potatoes are tender when pierced with a fork.
- Using an instant-read thermometer, verify that the thickest part of a shrimp reads at least 145°F (63°C). The crab meat should be hot and flaky.
- Using a slotted spoon, lift the seafood, sausage, and potatoes from the slow cooker, letting the excess butter drain back into the pot. Transfer to a serving platter or individual bowls.
- Serve with lemon wedges on the side for squeezing over the top. Optionally, spoon a little extra chili-lime butter from the slow cooker over each serving.
