Tips for success
For the best texture, keep the slow cooker on low and do not rush the cooking. The low heat allows the seafood to cook gently without becoming tough.
If you are using extra-large shrimp, they may cook faster than the potatoes, so check them after 3 hours and remove them if they are done, then return them to the pot when serving.
To make the chili-lime butter at home, melt 1/2 cup unsalted butter and stir in 1 tablespoon chili powder, 1 teaspoon lime zest, and 2 tablespoons lime juice.
Taste and adjust the heat with cayenne or hot sauce if you like. This flavored butter is also great on grilled corn or roasted vegetables.
Variations
- Spicy Andouille Sausage: Add 1 pound sliced andouille sausage along with the seafood in step 1. The sausage adds a smoky, spicy depth that pairs well with the chili-lime butter. Cook as directed.
- Lemon Garlic Butter: Replace the chili-lime butter with an equal amount of melted butter mixed with 4 minced garlic cloves and the zest of 1 lemon. Omit the cilantro and garnish with fresh parsley instead.
- Extra Heat: For a spicier boil, add 1 tablespoon Cajun seasoning and 1 teaspoon cayenne pepper to the melted butter before pouring it over the seafood. You can also serve with hot sauce on the side.
- Vegetarian Version: Replace the crab and shrimp with 2 cans of drained chickpeas and 1 pound of extra-firm tofu cut into cubes. Use vegetable broth instead of butter for a dairy-free option. Cook for 3 to 4 hours on low.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. The seafood may lose some texture but will still be flavorful.
- Freezer
- Freeze leftovers in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a skillet or microwave, adding a splash of water or extra butter to keep the sauce from drying out.

You can assemble the slow cooker insert the night before: layer the seafood, corn, potatoes, butter, and cilantro, then cover and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed. This is a great way to get a head start on a busy day.
Serving ideas
Serve the seafood boil directly from the slow cooker, letting guests scoop their own portions. Provide small bowls for the shells and plenty of napkins.
Steamed jasmine rice is a great side to soak up the chili-lime butter sauce, and lemon wedges add brightness. For a more casual meal, serve with crusty bread for dipping.
This dish is perfect for a weekend dinner or a small gathering. The slow cooker keeps everything warm, so guests can serve themselves at their own pace. Add a simple green salad with a tangy vinaigrette to balance the richness of the butter sauce.

Slow Cooker Chili Lime Cajun Seafood Boil

Ingredients
- 2 lb snow crab clusters, thawed if frozen
- 2 lb jumbo shrimp, peeled and deveined
- 4 ears sweet corn on the cob, halved
- 1 lb baby red bliss potatoes
- 1/2 cup melted chili-lime butter
- 1/4 cup chopped fresh cilantro
Instructions
- Place the snow crab clusters and jumbo shrimp in the bottom of a 7-quart slow cooker. Arrange the halved corn cobs and baby red bliss potatoes around and on top of the seafood. Pour the melted chili-lime butter over everything, then sprinkle with the chopped cilantro.
- Cover the slow cooker with the lid. Cook on low for 4 to 5 hours, until the potatoes are tender when pierced with a fork and the shrimp are pink and opaque. Do not stir during cooking, as the delicate crab and shrimp can break apart.
- After 4 hours, check the potatoes by piercing one with a fork. The shrimp should be pink and firm, and the crab meat should be opaque and flaky. If the potatoes are not yet tender, continue cooking for another 30 minutes and check again.
- Once everything is cooked, switch the slow cooker to the warm setting if you are not serving immediately. Leave the lid on to keep the seafood moist and hot. The butter sauce will stay glossy and aromatic.
- Using a slotted spoon, scoop the seafood, corn, and potatoes out of the slow cooker and onto a platter or individual plates. Serve with steamed jasmine rice and lemon wedges on the side. Spoon a little of the chili-lime butter sauce over each serving.
