Before you start
Before you start, make sure your slow cooker is clean and dry. If using frozen lobster tails, thaw them in the refrigerator overnight. Peel and devein the shrimp, if needed.
Dice the bell peppers, onion, and celery, and measure out the chili lime seasoning. Have the butter melting in a small saucepan while you assemble the other ingredients.

Instructions
Prep and Assemble
- Prep the Seafood and VegetablesPlace the split lobster tails and raw jumbo shrimp in the bottom of a 6-quart slow cooker. Scatter the diced red and green bell peppers, sweet Vidalia onion, and sliced celery over the seafood.Look for The slow cooker should be about half full with the seafood and vegetables evenly distributed.Tip If the lobster tails are frozen, thaw them in the refrigerator overnight before using.
- Make the Chili Lime ButterIn a small saucepan, melt the butter over low heat. Stir in the chili lime seasoning until fully combined. Remove from heat and stir in the chopped cilantro.Look for The butter is warm, fragrant, and the seasoning is fully dissolved.Tip If the butter browns slightly, that is fine; it adds a nutty flavor.
- Pour the Butter Over the SeafoodPour the warm chili lime butter mixture evenly over the seafood and vegetables in the slow cooker. Gently stir to coat everything with the butter.Look for All the seafood and vegetables are glistening with the butter mixture.Tip Stir gently so the lobster tails stay intact.
At the end of this phase, the slow cooker contains the raw seafood and vegetables, all coated in the chili lime butter. The butter should be warm and fragrant, and the seafood should look glossy. The slow cooker is ready to be turned on.
Slow Cook
- Slow Cook on LowCover the slow cooker and cook on low for 3 hours, or until the lobster tails are opaque and the shrimp are pink and firm to the touch. The internal temperature of the shellfish should reach 145°F (63°C).Look for The butter is bubbling gently around the edges, and the seafood is fragrant.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip Avoid lifting the lid during cooking to keep the heat steady.
- Check for DonenessAfter 3 hours, check the thickest part of a lobster tail and the center of a shrimp with an instant-read thermometer. The temperature must read at least 145°F (63°C).Look for The lobster meat is white and opaque, and the shrimp have curled into a loose C shape.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip If not done, cover and cook for 15 more minutes, then check again.
After 3 hours on low, the slow cooker is bubbling gently. The seafood is opaque and the shrimp are pink. The kitchen smells of chili, lime, and butter. The sauce has thickened slightly and the vegetables are tender.
Serve
- Serve the Seafood BoilUsing a slotted spoon, transfer the lobster tails, shrimp, and vegetables to a serving platter or individual plates. Spoon some of the chili lime butter from the slow cooker over the top. Serve with steamed jasmine rice and lemon wedges.Look for The seafood is glistening with butter and the vegetables are tender.Tip Squeeze fresh lemon over the seafood just before eating.
The seafood is plated with rice and lemon wedges. The butter sauce is spooned over the top, and the dish is ready to eat. The colors are vibrant—orange, red, green, and white—and the aroma is irresistible.
Common mistakes
One common mistake is overcooking the seafood, which makes it tough and chewy. Stick to the 3-hour mark on low and check early if your slow cooker runs hot.
Another mistake is lifting the lid too often to peek, which lets heat escape and extends the cooking time. Resist the urge and trust the process. Finally, don't skip the lemon wedges—the acidity brightens the rich butter sauce.
How to tell it’s done
The dish is done when the lobster tails are opaque and the meat flakes easily with a fork.
The shrimp should be pink and firm to the touch, and the internal temperature of the thickest part of the seafood should read at least 145°F (63°C) on an instant-read thermometer.
The vegetables should be tender and the butter sauce bubbling around the edges.
- Shellfish: 145°F (63°C) in the thickest part
