Tips for success
For the best texture, do not overcook the shrimp. The slow cooker's low heat is perfect, but every model runs slightly different. Check at the 2-hour mark, and if the shrimp are opaque and firm, they are ready.
If you prefer a thicker sauce, remove the shrimp and vegetables, then simmer the sauce on the stovetop for a few minutes to reduce. You can also add a slurry of cornstarch and water to thicken it further.
To make this dish even more flavorful, sear the shrimp in a hot skillet for 1 minute per side before adding to the slow cooker. This adds a caramelized crust and deeper flavor, but it adds extra time.
If you want a spicier version, add a minced serrano or jalapeño pepper with the vegetables. For a more citrusy kick, add the zest of one lime to the butter mixture. Adjust the chili powder to your heat preference.
Variations
- Spicy Cajun Shrimp: Replace the chili powder with Cajun seasoning and add a pinch of cayenne. Use andouille sausage slices along with the shrimp for a heartier dish. Serve over rice with hot sauce on the side.
- Garlic Herb Butter Shrimp: Skip the chili powder and add 3 minced garlic cloves and 1 teaspoon dried oregano. Use lemon juice instead of lime and add fresh parsley along with cilantro. This version is fragrant and savory.
- Coconut Lime Shrimp: Replace half the butter with coconut milk and add 1 teaspoon of lime zest. Use a pinch of turmeric for color. The sauce becomes creamy and tropical; serve with jasmine rice and toasted coconut flakes.
- Smoky Chipotle Shrimp: Use 1 chipotle pepper in adobo sauce, minced, instead of chili powder. Add 1 tablespoon of adobo sauce for extra depth. The dish gets a smoky, spicy kick that pairs well with cornbread or tortillas.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. The butter will solidify; reheat gently before serving.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a skillet over low heat or in the microwave in 30-second bursts, stirring until just heated through. Avoid boiling.
Store leftover shrimp and vegetables in an airtight container in the refrigerator for up to 3 days. The butter sauce will solidify when chilled; reheat gently to melt it. Do not leave the cooked dish at room temperature for more than 2 hours.
When reheating, use a skillet on low heat or the microwave in short bursts, stirring occasionally, until just warmed through. Avoid boiling, as that will toughen the shrimp.
You can prep the ingredients up to a day ahead: peel and devein the shrimp, dice the vegetables, and store them separately in the refrigerator. The butter mixture can be combined and refrigerated in a small container.
When ready to cook, layer everything in the slow cooker and start. The cooking time remains the same. If you want to cook the entire dish ahead, you can, but the shrimp are best served fresh; refrigerate leftovers after cooling.
Serving ideas
Serve the shrimp and vegetables over steamed jasmine rice, which soaks up the chili lime butter beautifully. Alternatively, serve with crusty bread for dipping, or over grits or polenta for a Southern twist. A side of sautéed greens or a simple green salad balances the richness. Garnish with extra cilantro and lime wedges for squeezing over the top.
For a low-carb option, serve the shrimp over cauliflower rice or zucchini noodles. The butter sauce works with almost any base. You can also serve it as an appetizer with toothpicks and extra sauce on the side for dipping. The dish is versatile and can be a main course or a party dish. Leftovers can be turned into tacos or a shrimp salad.

- 2 lb jumbo shrimp, peeled and deveined
- 2 bell peppers (1 red, 1 green), diced
- 1 sweet Vidalia onion, diced
- 2 stalks celery, thinly sliced
- 1/2 cup unsalted butter, melted
- 3 tbsp fresh lime juice
- 1 tsp chili powder
- 1/4 cup fresh cilantro, chopped
- 1/2 tsp kosher salt
Instructions
- Place the peeled and deveined jumbo shrimp in an even layer in the bottom of a 6-quart slow cooker. Scatter the diced red and green bell peppers, sweet Vidalia onion, and sliced celery over the shrimp, spreading them evenly.

- Cover the slow cooker and cook on LOW for 2 hours, or until the shrimp are opaque and cooked through. Do not lift the lid during cooking, as this releases heat and extends the cooking time.
- Once the shrimp are cooked, use a slotted spoon to lift the shrimp and vegetables out of the butter sauce. Serve immediately over steamed jasmine rice with lemon wedges on the side. Spoon extra chili lime butter over each serving.
