Tips for success
For the most tender lobster, use the low setting and check for doneness at the 1-hour 45-minute mark. The lobster tail meat should be just opaque — it will continue to cook as it rests in the hot butter.
If you prefer extra garlic flavor, add 2 more smashed cloves; they will mellow as they cook. For a spicier kick, add a pinch of cayenne pepper to the butter mixture.
The chili-lime butter sauce is the star — don't skimp on the lime juice. Fresh lime zest can also be stirred in for a brighter citrus aroma. When serving, use a slotted spoon to lift out the seafood, then spoon extra sauce over the top. The sauce is delicious over the rice, so make sure to include it in each serving.
Variations
- Spicy Cajun Twist: Replace the chili powder with 1 teaspoon Cajun seasoning and add 1/2 teaspoon smoked paprika. Stir in 2 tablespoons of hot sauce with the butter. The heat will build as it cooks, so adjust to taste.
- Add Andouille Sausage: Slice 8 ounces of andouille sausage into rounds and layer it with the seafood. The sausage adds a smoky, savory depth that complements the butter sauce. Cook time stays the same.
- Herb-Butter Variation: Swap the chili powder for 1 teaspoon dried thyme and 1 teaspoon dried oregano. Use fresh parsley instead of cilantro for a more Mediterranean flavor. Serve with lemon wedges as usual.
- Vegetable Boost: Add 1 cup of halved baby potatoes or 1 cup of sliced bell peppers to the bottom of the slow cooker. They will soften and absorb the butter sauce during cooking. Increase the cook time by 15 minutes if adding potatoes.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container for up to 3 days. The seafood will keep its texture if not overcooked during reheating.
- Freezer
- Freeze in a freezer-safe container for up to 1 month. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a skillet over low heat, adding a splash of water or broth to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The seafood will continue to absorb the butter sauce, so it may become more flavorful but slightly softer.
Reheat gently in a skillet over low heat or in the microwave in 30-second bursts, just until warmed through. Avoid boiling, which will toughen the shellfish.
You can prep the ingredients up to a day ahead: split the lobster tails, peel and devein the shrimp, smash the garlic, and measure the corn and butter. Keep the seafood chilled in the refrigerator separately from the butter mixture.
When ready to cook, layer everything in the slow cooker and follow the recipe. This makes the dish perfect for entertaining — the prep is done, and the slow cooker does the rest.
Serving ideas
Serve the seafood boil directly from the slow cooker for a casual family-style meal, or plate individual servings over steamed jasmine rice. The rice soaks up the chili-lime butter beautifully, making it an essential part of the dish.
Lemon wedges on the side let everyone brighten their plate to taste. A simple green salad with a light vinaigrette would round out the meal nicely.
For a more indulgent presentation, arrange the lobster tails on top of the rice with the shrimp nestled alongside. Spoon the corn and garlic around the edges, then drizzle with extra butter sauce. Garnish with additional chopped cilantro if desired. This dish is rich, so serve with plenty of crusty bread or extra rice to balance the flavors.

Slow-Cooker Chili Lime Butter Garlic Corn Lobster Tails

Ingredients
- 4 split cold-water lobster tails
- 1 lb raw jumbo shrimp, peeled and deveined
- 2 cups frozen sweet corn kernels
- 12 cloves garlic, smashed
- 1/2 cup unsalted butter, melted
- 2 tbsp fresh lime juice
- 1 tsp chili powder
- 1/4 cup fresh cilantro, chopped
- Steamed white jasmine rice, for serving
- Lemon wedges, for serving
Instructions
- Place the split lobster tails and peeled jumbo shrimp in the bottom of a 6-quart slow cooker in a single layer. Scatter the frozen sweet corn kernels and smashed garlic cloves evenly over the seafood. Do not stir — layering keeps the shellfish from overcooking on the bottom.
- In a small bowl, stir together the melted unsalted butter, fresh lime juice, and chili powder until well combined. Pour the mixture evenly over the seafood and corn. Sprinkle the chopped cilantro over the top.
- Cover the slow cooker and cook on LOW for 2 hours, or until the lobster tails are opaque and the shrimp are pink and firm. Do not lift the lid during the first 90 minutes — the steam is what cooks the seafood gently.
- Using a slotted spoon, lift the lobster tails, shrimp, corn, and garlic from the butter sauce and divide among serving bowls or plates. Spoon a little extra chili-lime butter over the top. Serve immediately with steamed jasmine rice and lemon wedges on the side.
