Before you start

Ensure the slow cooker is placed on a heat-resistant surface away from any edge. Prepare the mashed potatoes either by boiling and mashing fresh potatoes or by using a preferred method.

Have two clean forks ready for the shredding process once the chicken has finished its long cook time. Ensure no other appliances are crowding the workspace to allow for easy access when transferring the finished chicken to the serving bowls.

Ingredients at a glance (3)
  • 2 lb boneless skinless chicken thighs
  • 2 packets chicken gravy mix
  • mashed potatoes, for serving

Instructions

Preparation and seasoning

  1. Prepare the slow cooker
Place the chicken thighs into the basin of the slow cooker. Add the chicken gravy mix packets directly over the chicken, ensuring the seasoning is distributed well to create the base for the savory sauce.
Look for Ensure the seasoning is evenly spread over the chicken pieces.
Tip Adding the seasoning directly allows the chicken juices to create the gravy naturally.

The chicken should be arranged in a single layer at the bottom of the slow cooker. The gravy mixture must be distributed evenly over the top, ensuring every piece of chicken is well-coated. Check that the lid is securely closed to prevent heat loss before starting the timer.

Slow cooking process

  1. Slow cook the chicken
Cover the slow cooker with the lid and set to cook on low for 6 hours. This slow, gentle heat ensures the chicken becomes fork-tender and absorbs the savory flavors of the gravy. Ensure the internal temperature reaches 165°F (74°C) before proceeding to the shredding stage.
Look for The chicken is ready when it pulls apart easily with two forks.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid opening the lid frequently to maintain a consistent internal temperature.

The chicken should be simmering steadily, with steam visible under the lid. Throughout the process, the kitchen will begin to smell savory and rich.

Ensure the slow cooker remains on the low setting throughout the duration to achieve the best texture for the chicken thighs without toughening the meat.

Shredding and assembly

  1. Shred and serve
Use two forks to shred the chicken directly in the slow cooker, allowing the meat to incorporate thoroughly with the thickened gravy. Once shredded, use a ladle to scoop the chicken and gravy generously over a warm, fluffy mound of mashed potatoes in a bowl.
Look for The gravy should have a glossy, thick consistency that coats the back of the ladle.
Tip If the gravy is too thin, stir in a small amount of cornstarch slurry and cook for an additional 15 minutes.

The chicken must be soft enough to pull apart easily with minimal pressure from two forks. The gravy should be thick enough to coat the chicken without being watery. Ensure the mashed potatoes are steaming hot before ladling the chicken and gravy over them for the final presentation.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent even cooking throughout the chicken pieces. Another error is failing to fully incorporate the gravy mix, which leaves gritty pockets of seasoning.

Avoid lifting the lid too often during the cooking process, as this releases heat and steam, significantly increasing the total time required to reach the safe internal temperature for the poultry.

How to tell it’s done

The chicken is done when it reaches an internal temperature of at least 165°F (74°C). At this stage, the meat should be exceptionally tender and easily shredded with a fork.

The gravy should be thickened, glossy, and uniform in color, coating the back of a spoon without running off too quickly. If the meat offers resistance, continue cooking for another 30 minutes until the desired tenderness is achieved.

  • Poultry: 165°F (74°C) in the thickest part
