Tips for success

For the best flavor, brown the chicken thighs in a skillet before adding them to the slow cooker. While the video shows a dump-and-go method, searing the chicken adds a deeper, caramelized flavor that enriches the entire dish.

If you have the extra 10 minutes, it's worth it. Alternatively, you can add a splash of liquid smoke or a pinch of smoked paprika to mimic that smoky depth without searing.

Collard greens can vary widely in size and toughness. If your bunch is particularly large or the leaves are very thick, you may need to increase the cooking time by 30 to 60 minutes.

Conversely, if you're using baby collards or pre-washed chopped greens, they will cook faster. Always check for tenderness before serving—the greens should offer no resistance when bitten.

Variations

  • Smoky Bacon Version: Cook 4 slices of bacon in a skillet until crisp, then crumble. Add the bacon and a tablespoon of bacon fat to the slow cooker along with the other ingredients. The bacon adds a smoky, salty depth that pairs beautifully with the greens.
  • Spicy Cajun Twist: Replace the paprika with 1 tablespoon of Cajun seasoning and add a diced green bell pepper along with the onion. Serve with hot sauce on the side for an extra kick.
  • Tangy Mustard Greens: Substitute mustard greens for the collard greens. They have a peppery bite that works well with the cider vinegar. Reduce the cooking time by about an hour, as mustard greens are more tender.
  • Vegetarian Collard Greens: Omit the chicken and use vegetable broth. Add a can of drained and rinsed black-eyed peas or white beans during the last 30 minutes of cooking for protein and heartiness.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water if needed.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a splash of broth or water if the pot liquor has reduced too much.

Store leftover chicken and collard greens in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld as it sits, making leftovers even better. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the pot liquor has thickened too much.

This recipe can be assembled the night before. Place all the ingredients in the slow cooker insert, cover, and refrigerate overnight. In the morning, simply place the insert in the slow cooker base and start cooking on low.

You may need to add a few extra minutes to the cooking time since the ingredients start cold. Alternatively, cook the full recipe, cool, and refrigerate for up to 4 days—it reheats beautifully.

Serving ideas

Serve the chicken and collard greens in shallow bowls, with plenty of pot liquor spooned over the top. Cornbread is the classic companion—its sweetness and crumbly texture are perfect for soaking up the savory broth.

Crusty bread, rice, or mashed potatoes also work well to catch every last drop. A sprinkle of hot sauce or a few cracks of black pepper at the table lets everyone adjust the heat to their liking.

This dish is a meal in itself, but you can round it out with a simple green salad or roasted vegetables for a lighter touch. For a more substantial spread, pair it with black-eyed peas or mac and cheese. The pot liquor is so good that you'll want to serve it with something that can soak it up—whether that's cornbread, biscuits, or even a spoon.

Frequently asked questions

Can this recipe be made in a Dutch oven instead of a slow cooker?
Yes. To make it on the stovetop, brown the chicken in a Dutch oven over medium-high heat, then add the remaining ingredients. Bring to a simmer, cover, and cook over low heat for 1 1/2 to 2 hours, until the chicken is tender and the greens are silky. Stir occasionally and add extra broth if needed.
Why are the collard greens still tough after cooking?
Collard greens can be tough if they are not cooked long enough or if the heat is too low. Make sure the slow cooker is set to low and cook for at least 6 hours. If the greens are still tough, continue cooking for another 30 to 60 minutes. Also, be sure to remove the tough stems before chopping.
Can this dish be made with boneless, skinless chicken breasts?
Yes, but the cooking time will be shorter. Boneless, skinless chicken breasts can dry out in the slow cooker, so check them at the 3-hour mark on low. They should reach 165°F (74°C). Keep in mind that the broth will be less rich without the bones.
Is it necessary to use cider vinegar?
Cider vinegar is traditional and adds a bright, tangy note that balances the richness of the chicken and greens. If you don't have it, you can substitute white vinegar, red wine vinegar, or even a squeeze of lemon juice. The acidity also helps tenderize the greens.
What can be used instead of paprika?
Smoked paprika is a great substitute and adds a deeper, smokier flavor. You can also use chili powder or a pinch of cayenne for heat. If you prefer a milder taste, simply omit the paprika—the dish will still be flavorful.

Slow Cooker Chicken and Collard Greens

A top-down view of raw chicken thighs and chopped collard greens in a black slow cooker insert.

Ingredients

  • 6 bone-in, skinless chicken thighs (about 2 1/2 lb)
  • 1 bunch collard greens, stemmed and chopped (about 8 cups)
  • 1 medium yellow onion, diced
  • 2 tsp paprika
  • 2 cups chicken broth
  • 2 tbsp apple cider vinegar

Instructions

  1. Place the chicken thighs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. Scatter the chopped collard greens and diced onion over the top. Sprinkle with paprika, then pour the chicken broth and apple cider vinegar over everything.
  2. Cover the slow cooker with the lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through and the collard greens are silky.
  3. Once the chicken is cooked through, use tongs to transfer the thighs to a cutting board. When cool enough to handle, remove the bones and shred the meat into bite-size pieces, discarding the bones.
  4. Stir the shredded chicken back into the slow cooker with the greens and pot liquor. Taste and adjust seasoning with salt and pepper if needed.
  5. Ladle the chicken and collard greens into shallow bowls, making sure to spoon plenty of the pot liquor over each serving. Serve hot, with cornbread or crusty bread on the side if desired.
