Before you start

Before you start, pat the beef sirloin tip roast dry with paper towels. If the roast is larger than the slow cooker, trim it to fit. Have your jar of giardiniera, pepperoncinis, Italian seasoning, and beef broth measured and ready.

Set out your slow cooker and a cutting board. If you plan to serve the sandwiches immediately, warm the French rolls in a 350°F oven for a few minutes. Keep extra giardiniera on hand for topping. There is no need to pre-cook anything; this is a true dump-and-go recipe.

Ingredients at a glance (7)
  • 3 1/2 lb beef sirloin tip roast
  • 1 jar spicy Chicago pickled giardiniera vegetables with oil
  • 8 whole pepperoncinis
  • 1 packet Italian seasoning
  • 350 ml beef broth
  • 8 crusty Turano French rolls
  • Extra hot giardiniera, for serving

Instructions

Layer and Slow-Cook

  1. Layer the Roast and Aromatics
Place the beef sirloin tip roast in the bottom of a 6-quart slow cooker. Pour the entire jar of spicy giardiniera with its oil over the roast. Scatter the whole pepperoncinis around the meat. Sprinkle the Italian seasoning evenly over the top. Pour the beef broth down the side of the cooker, being careful not to rinse the seasoning off the meat.
Look for The roast is nestled in a colorful bed of pickled vegetables and broth.
Tip Use a spatula to spread the giardiniera evenly so every bite gets flavor.
  2. Cover and Set to Low
Place the lid securely on the slow cooker. Set the heat to LOW and cook for 8 hours, or until the beef is fork-tender and easily pulls apart. Avoid lifting the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
Look for After 8 hours, the roast should shred easily with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If your slow cooker runs hot, check at 7 hours; if it runs cool, allow up to 9.

At the end of this phase, the slow cooker is filled with the roast, giardiniera, pepperoncinis, Italian seasoning, and broth. The liquid should be bubbling gently around the edges. The aroma is intensely savory and slightly spicy. The meat is not yet fork-tender, but the cooking liquid has turned a rich amber color. Before moving on, make sure the roast is submerged in the liquid; if not, add a little extra broth. Let it cook undisturbed for the full 8 hours.

Shred and Rest

  1. Shred the Beef in the Jus
Transfer the roast to a cutting board. Using two forks, shred the beef into thin, juicy ribbons, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the spicy pepper jus. Let it sit in the warm jus for 10 minutes to absorb the flavors.
Look for The beef is tender and pulls apart into long, moist strands.
Tip Shred while the meat is still warm; it is easier and keeps the juices in.
  2. Rest the Shredded Beef
Let the shredded beef rest in the hot jus for at least 3 minutes before serving. This allows the meat to reabsorb some of the liquid and ensures every bite is juicy. Keep the slow cooker on WARM while you prepare the rolls.
Look for The beef is coated in a glossy, spicy jus.
Tip If the jus seems thin, let it simmer on HIGH for 10 minutes to reduce slightly.

The roast should be so tender that it falls apart at the touch of a fork. The shreds are thin, juicy ribbons, coated in a glossy, spicy jus. The giardiniera peppers have softened but still hold their shape. The jus is flavorful and slightly thickened.

After shredding, the beef rests in the warm jus for at least 3 minutes, allowing it to reabsorb liquid. The meat should be moist and seasoned throughout. Check that the beef is fully shredded and no large chunks remain.

Assemble and Serve

  1. Assemble the Sandwiches
Split the crusty French rolls lengthwise, leaving one side hinged. Pile a generous amount of shredded beef onto the bottom half of each roll. Crown with extra hot giardiniera, spooning it over the meat. Close the sandwich and place it on a serving plate.
Look for The rolls are filled with juicy beef and bright pickled peppers.
Tip Warm the rolls in a 350°F oven for 5 minutes for extra crustiness.
  2. Ladle the Jus Over
Ladle the hot giardiniera-pepper jus generously over each sandwich, letting it soak into the bread. Serve immediately, with extra jus on the side for dipping.
Look for The bread is moist but still holds its shape.
Tip For a true Chicago-style experience, serve with hot giardiniera on the side.

The sandwiches are piled high with shredded beef and crowned with extra giardiniera. The jus is ladled over the top, soaking into the crusty rolls. The bread is slightly crispy on the outside but moist from the jus. The beef is juicy and tender, with a spicy, tangy kick from the giardiniera. Serve immediately, with extra jus on the side for dipping. The sandwiches should be eaten while hot, with plenty of napkins on hand.

Common mistakes

One common mistake is lifting the lid during cooking, which lets heat escape and extends the cooking time. Avoid the urge to peek. Another is shredding the beef too early; if it doesn’t shred easily, it needs more time. Be patient.

Also, don’t drain the giardiniera; the oil and brine are essential for the jus. If you use a lean roast, it may dry out; that’s why the broth and giardiniera are important. Finally, don’t skip the resting time after shredding—it helps the meat absorb the jus.

How to tell it’s done

The beef is done when it is fork-tender and shreds easily with two forks. The internal temperature should reach at least 145°F (63°C) for whole-cut beef, but because it cooks for 8 hours, it will be well above that and very tender.

The jus should be rich and slightly thickened, with a spicy, tangy aroma. To test, insert a fork into the roast; if it twists easily and pulls apart, it’s ready. Let the shredded beef rest in the warm jus for at least 3 minutes before serving to allow the flavors to meld.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
