Tips for success
For the most tender skirt steak, slice it against the grain into thin strips before cooking. This shortens the muscle fibers, making each bite easier to chew.
If you prefer larger chunks, you can leave the steak in longer strips and slice after cooking, but pre-slicing allows the seasoning to penetrate more deeply.
To achieve a thicker sauce, remove the lid for the last 30 minutes of cooking to let some moisture evaporate. If the sauce is too thick, stir in a splash of beef broth or water.
For a smoky flavor, add a drained can of fire-roasted tomatoes or a teaspoon of smoked paprika. Let the dish rest before serving to allow the flavors to meld.
Variations
- Chicken Fajita Crockpot: Substitute 2 pounds of boneless, skinless chicken thighs for the skirt steak. Cook on low for 4 to 5 hours until the chicken shreds easily. Use the same peppers, onions, and cheese sauce.
- Spicy Chipotle Version: Add 2 chopped chipotle peppers in adobo sauce and 1 teaspoon of adobo sauce along with the fajita seasoning. This adds a smoky, spicy kick that complements the creamy cheese.
- Beef and Bean Fajita Bowl: Stir in a can of drained black beans during the last 30 minutes of cooking. Serve over rice with avocado, salsa, and sour cream for a heartier meal.
- Low-Carb Lettuce Wraps: Skip the rice and serve the steak and pepper mixture in crisp lettuce cups. Top with pico de gallo and a dollop of sour cream for a fresh, lighter option.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth or water to restore the sauce's creamy texture.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a splash of beef broth or water if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave with a splash of broth to loosen it. Cool leftovers within 2 hours of cooking and refrigerate promptly.
Assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. This saves time and allows the flavors to marinate. Do not add the cheese until just before cooking, or it may separate.
Serving ideas
Spoon the steak and vegetables over a bed of fluffy cilantro-lime rice, letting the creamy queso sauce cascade over the top. Garnish with fresh cilantro, a squeeze of lime, or sliced jalapeños for heat.
The dish also works beautifully in warm flour tortillas as fajitas, or served over tortilla chips for a loaded nacho-style meal.
For a low-carb option, serve over cauliflower rice or a crisp green salad. The rich sauce pairs well with a side of black beans or refried beans.
Leftovers can be repurposed as a filling for quesadillas or stuffed peppers. This versatile dish is satisfying on its own or as part of a larger spread.

Crockpot Cheddar Fajita Skirt Steak, Easy Dump Dinner

Ingredients
- 2 lb beef skirt steak, sliced into strips
- 3 bell peppers (red, yellow, orange), sliced
- 1 medium red onion, sliced into strips
- 2 tbsp fresh lime juice
- 8 oz cream cheese, softened and cut into chunks
- 2 cups shredded sharp cheddar cheese
- 2 tbsp fajita seasoning
- cilantro-lime rice, for serving
Instructions
- Place the sliced skirt steak strips in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and red onion strips over the meat. Drizzle with fresh lime juice. Sprinkle the fajita seasoning evenly over everything.
- Place the softened cream cheese chunks in the center of the slow cooker. Sprinkle the shredded sharp cheddar over the top. Do not stir; the cheese will melt and create a rich sauce during cooking.
- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the skirt steak is fork-tender and the peppers and onions are soft. The sauce will be bubbling and thick. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the meat rest for at least 3 minutes. Serve the steak and vegetables with a generous spoonful of the creamy cheddar sauce over cilantro-lime rice.
