Tips for success
For the best texture, let the pork rest for a few minutes after cooking before shredding. This allows the juices to redistribute, keeping the meat moist.
When shredding, use two forks and pull the meat apart in large, rustic chunks rather than fine shreds—this gives a more satisfying bite.
If the sauce seems too thin at the end, remove the lid and cook on high for 20 to 30 minutes to reduce it slightly.
Conversely, if it's too thick, stir in a splash of chicken broth or water. Taste and adjust the seasoning with salt and pepper—though the cheese adds plenty of salt, so go easy.
Variations
- Spicy Chipotle: Add 2 chopped chipotle peppers in adobo sauce along with the vegetables for a smoky, spicy kick. Reduce the lime juice to 3 tablespoons to balance the heat.
- Chicken Fajita: Substitute boneless, skinless chicken thighs for the pork shoulder. Cook on low for 6 hours, or until the chicken reaches 165°F (74°C) and shreds easily.
- Beef Barbacoa: Use beef chuck roast instead of pork, and add 4 cloves of garlic and 1 teaspoon ground cumin. Cook on low for 10 hours, or until the beef is fork-tender.
- Veggie Lover's: Swap the pork for 3 cups of extra-firm tofu, pressed and cubed. Add 1 cup of frozen corn and 1 can of black beans (drained) for extra heartiness. Cook on low for 4 hours.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, or in the microwave in 30-second bursts.
Leftover carnitas can be stored in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, but it will loosen again when reheated.
Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed to restore the saucy consistency.
You can assemble the entire slow cooker insert the night before, cover it, and refrigerate it.
In the morning, simply place the insert in the slow cooker and cook on low as directed. You may need to add 30 minutes to the cooking time because the ingredients start cold.
Serving ideas
Serve the carnitas over cilantro-lime rice for a complete meal, or pile them into warm flour or corn tortillas with your favorite toppings like salsa, avocado, or sour cream. The creamy sauce also pairs well with a simple side salad or roasted vegetables.
For a low-effort dinner, serve the carnitas in bowls with rice, black beans, and a sprinkle of fresh cilantro. The dish is also great for meal prep—portion it into containers with rice and vegetables for easy lunches throughout the week.

Slow Cooker Cheddar Fajita Pork Carnitas

Ingredients
- 3 lb pork shoulder, cut into 2-inch chunks
- 3 bell peppers (red, yellow, orange), sliced
- 1 medium red onion, sliced into strips
- 1/4 cup fresh lime juice
- 8 oz cream cheese, softened
- 2 cups shredded sharp cheddar cheese
Instructions
- Place the pork shoulder chunks in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and red onion strips over the pork. Pour the fresh lime juice evenly over the top.
- Place the block of cream cheese in the center of the slow cooker. Sprinkle the shredded sharp cheddar over the top, covering the meat and vegetables as much as possible.
- Cover the slow cooker and cook on low for 8 hours, or until the pork is fork-tender and easily shreds. Do not lift the lid during the first 6 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Using two forks, shred the pork directly in the pot. Stir everything together until the cream cheese and cheddar are fully melted into a smooth sauce and the peppers and onions are coated. Let it rest for 3 minutes before slicing.
- Spoon the carnitas over cilantro-lime rice or into warm tortillas. Top with extra cheese, if desired, and serve hot.
