Tips for success

For the best texture, slice the skirt steak against the grain—this shortens the muscle fibers and makes each bite more tender.

If you prefer a thicker sauce, stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons water during the last 30 minutes of cooking. You can also brighten the dish with a squeeze of fresh lime juice and a handful of chopped cilantro before serving.

This recipe is incredibly versatile. Serve it over rice, in warm tortillas, or on a bed of greens. The sauce is also great over roasted vegetables or baked potatoes.

If you like extra heat, add a pinch of cayenne or a sliced jalapeño with the other ingredients. For a smoky twist, use smoked cheddar or add a dash of smoked paprika.

Variations

  • Chicken Version: Swap the skirt steak for boneless, skinless chicken thighs. Cook on low for 4-5 hours, then shred. Ensure the chicken reaches 165°F (74°C) before serving.
  • Mild & Sweet: Reduce the chipotle to 1 teaspoon and add 1/4 cup of pineapple juice from the can. Use Monterey Jack instead of cheddar for a milder, creamier sauce.
  • Taco Night: Serve the beef in warm corn tortillas with shredded cabbage, pickled onions, and a squeeze of lime. The sauce doubles as a creamy salsa.
  • Spicy Smoky: Add 1/2 teaspoon of smoked paprika and a minced jalapeño to the slow cooker. Use pepper Jack cheese for an extra kick.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently with a splash of water or broth to restore its creamy consistency.

You can assemble the raw ingredients in the slow cooker insert the night before and refrigerate it. In the morning, place the insert in the cooker and cook as directed. This makes it even easier to get dinner going on a busy day.

Serving ideas

Serve this chipotle pineapple skirt steak over fluffy cilantro-lime rice to soak up every bit of the creamy sauce.

The bright, citrusy rice balances the richness of the queso and the heat of the chipotle. Add a side of warm corn tortillas for scooping, or a simple green salad with avocado for freshness.

For a more indulgent meal, pile the beef into tortillas and top with pickled onions, sliced radishes, and extra cilantro. The sweet-spicy sauce works beautifully as a taco filling.

You can also serve it over nachos or baked potatoes for a crowd-pleasing dinner. However it's served, this dish is sure to become a favorite.

Frequently asked questions

Can this recipe be made with chicken instead of beef?
Yes, boneless, skinless chicken thighs work well. Cook on low for 4-5 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C). Shred the chicken and return it to the sauce before serving.
How can the sauce be thickened if it's too thin?
If the sauce is too thin after cooking, remove the beef and let the sauce simmer uncovered on the stovetop or on the high setting in the slow cooker for 15-20 minutes. Alternatively, stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water, then cook for 10 more minutes.
Is it necessary to brown the steak before adding to the slow cooker?
No, browning is not necessary. The slow cooker will tenderize the meat and develop flavor without searing. However, if you have time, searing can add extra depth, but it's not required for this recipe.
Can this dish be frozen?
Yes, freeze cooled leftovers in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave. Add a splash of broth if the sauce seems too thick.
What is the best way to slice skirt steak for this recipe?
Slice the skirt steak against the grain into 1-inch strips. Cutting against the grain shortens the muscle fibers, making the meat more tender after cooking. For easier slicing, partially freeze the steak for 15-20 minutes before cutting.

Slow cooker filled with creamy cheddar chipotle pineapple skirt steak, bubbling and steaming

Ingredients

  • 2 lb beef skirt steak, sliced into strips
  • 1 can (20 oz) pineapple tidbits in juice, drained
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 8 oz cream cheese, softened and cut into cubes
  • 2 cups shredded sharp cheddar cheese
  • cilantro-lime rice, for serving

Instructions

  1. Place the sliced skirt steak strips in the bottom of a 6-quart slow cooker. Spread the drained pineapple tidbits over the beef. Add the minced chipotle peppers in adobo, distributing them evenly. Place the cubed cream cheese in the center of the mixture, then scatter the shredded cheddar over the top.
  2. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is tender and the sauce is bubbling. Stir gently once halfway through, if possible, to help the cream cheese melt into the sauce. Let it rest for 3 minutes before slicing.
  3. Once the beef is fork-tender, remove it from the slow cooker and place on a cutting board. Let it rest for at least 3 minutes, then slice or shred the meat into bite-sized pieces. Return the beef to the sauce and stir to coat.
  4. Spoon the cilantro-lime rice onto plates. Top with the chipotle pineapple skirt steak and a generous ladle of the creamy queso sauce. Serve hot.
