Tips for success
For the most tender lamb, always choose shoulder over leg. Shoulder has more connective tissue, which breaks down into gelatin during slow cooking, giving you that melt-in-your-mouth texture.
If you're short on time, you can cut the lamb into slightly smaller pieces, but check for doneness earlier. Also, don't skip the cashew cream—it's what gives the sauce its luxurious, velvety consistency that pairs so well with the bold spices.
To make your own cashew cream, soak raw cashews in hot water for 30 minutes, then blend with fresh water until completely smooth. This recipe is forgiving; you can add more or less sauce depending on your preference.
If you like extra heat, add a pinch of cayenne or chopped fresh chili when layering the ingredients. The slow cooker does all the work, so you can use the extra time to prepare side dishes or simply relax.
Variations
- Chicken Tikka Masala: Swap the lamb for 2 pounds of boneless, skinless chicken thighs. Cook on low for 4 to 5 hours or until the chicken reaches 165°F (74°C). Shred or leave in chunks.
- Vegetarian Version: Omit the lamb and add 1 can of drained chickpeas and 2 cups of cauliflower florets. Cook on low for 3 to 4 hours, until the cauliflower is tender.
- Extra Spicy: Add 1 to 2 teaspoons of red chili flakes or a chopped serrano pepper along with the garam masala for a fiery kick.
- Creamy Coconut Twist: Replace the cashew cream with full-fat coconut cream and add a squeeze of lime juice at the end for a brighter, tropical flavor.

Store any leftover curry in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the sauce has thickened too much.
This curry is perfect for making ahead. Prepare it up to 2 days in advance, then reheat gently before serving. The lamb will become even more tender as it sits. You can also freeze the cooked curry for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the cashew tikka masala lamb over fluffy steamed basmati rice to soak up the rich sauce. Warm naan or roti on the side is essential for scooping up every bit of the velvety curry.
A side of cooling cucumber raita or a simple green salad with lemon vinaigrette balances the warmth of the spices. Garnish with fresh cilantro if desired, though the video does not show it.
For a complete meal, set out small bowls of chopped red onion, sliced cucumber, and lemon wedges so everyone can customize their plate.
This dish also pairs well with roasted vegetables like cauliflower or green beans. The leftovers are excellent stuffed into a pita or wrapped in a tortilla for a quick lunch the next day.

Slow Cooker Cashew Tikka Masala Lamb

Ingredients
- 2 lb lamb shoulder, cut into 1-inch cubes
- 1 1/2 cups tikka masala sauce
- 2 tsp garam masala
- 1/2 cup cashew cream
- 4 tbsp butter, cut into pats
Instructions
- Place the cubed lamb shoulder into the slow cooker insert in an even layer. Pour the tikka masala sauce over the lamb, then sprinkle with the garam masala. Add the cashew cream and top with the butter pats. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the lamb is fork-tender and easily shreds. Stir gently once halfway through if possible, but avoid over-stirring so the meat stays intact. Let it rest for 3 minutes before slicing.
- Once the lamb is cooked through and tender, let it rest for at least 3 minutes. Serve the curry over steamed basmati rice with warm naan on the side. Ladle the sauce generously over each portion.
