Tips for success
For the best flavor, use low-sodium soy sauce and adjust the salt at the end. The hoisin and soy already provide plenty of salt, so taste before adding any extra.
If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it in during the last 15 minutes of cooking. This will give the sauce a glossier, more clingy texture without changing the flavor.
To make the dish spicier, keep the seeds in the dried chilies or add a teaspoon of chili garlic sauce. For a milder version, use only one or two chilies and remove the seeds.
You can also add a splash of rice vinegar at the end for extra brightness. If you have leftover sauce, it's great over rice or noodles the next day.
Variations
- Vegetable-Packed: Add 1 cup of broccoli florets or snap peas during the last 30 minutes of cooking for extra crunch and nutrition. You can also swap the zucchini for mushrooms or water chestnuts.
- Extra Spicy: Increase the dried chilies to 10-12 and add 1 teaspoon of chili garlic sauce along with the other sauce ingredients. For a smoky heat, use chipotle powder instead of cayenne.
- Peanut Version: Replace the cashews with roasted peanuts for a more traditional Kung Pao. Peanuts are also a great budget-friendly option and add a different nutty flavor.
- Sweeter Glaze: Add 1 tablespoon of brown sugar or honey to the sauce for a sweeter, more caramelized glaze. This pairs well with extra ginger and a splash of rice vinegar.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. The sauce will thicken; add a splash of water when reheating.
- Freezer
- Freeze without the cashews and rice for up to 3 months. Thaw overnight in the fridge and reheat gently.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until hot and bubbling. Add a little water or chicken broth to restore the sauce's consistency.
Store leftover Kung Pao chicken in an airtight container in the refrigerator for up to 4 days. The cashews will soften over time, but the flavor remains delicious. Reheat gently in the microwave or on the stovetop with a splash of water to loosen the sauce. The rice can be stored separately and reheated.
You can prep the ingredients up to a day ahead: cube the chicken, dice the vegetables, and mix the sauce. Store them separately in the refrigerator.
When ready to cook, layer everything in the slow cooker and proceed. The dried chilies can be added just before cooking. This makes the recipe even more convenient for busy evenings.
Serving ideas
Serve the Kung Pao chicken over steamed jasmine rice for a classic pairing. The rice soaks up the glossy sauce, making every bite satisfying.
Garnish with extra sliced scallions and a sprinkle of toasted sesame seeds for added freshness and crunch. For a low-carb option, serve over cauliflower rice or alongside steamed broccoli.
This dish also works well in lettuce cups for a fun, lighter meal. Spoon the chicken into crisp romaine or butter lettuce leaves and top with extra cashews. You can also serve it over noodles, such as lo mein or rice noodles, for a different take. The leftovers are great in wraps or as a filling for spring rolls.

Crockpot Cashew Kung Pao Chicken with Bold Takeout Flavor

Ingredients
- 2 lb boneless skinless chicken thighs, cut into 1-inch cubes
- 1 medium red bell pepper, diced
- 1 medium zucchini, diced
- 1/3 cup low-sodium soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp Chinese black vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp fresh ginger, grated
- 6-8 dried Tien Tsin chilies, stems removed
- 1 cup roasted unsalted cashews
- 1/2 cup scallions, sliced (about 4)
- Steamed jasmine rice, for serving
- Toasted sesame seeds, for garnish, to taste
Instructions
- Place the cubed chicken thighs in the bottom of a 6-quart slow cooker. Scatter the diced red bell pepper and zucchini over the chicken. In a small bowl, whisk together the soy sauce, hoisin sauce, black vinegar, sesame oil, and grated ginger. Pour the sauce over the chicken and vegetables, then add the dried chilies. Stir gently to coat everything evenly.
- Place the lid securely on the slow cooker. Set the slow cooker to HIGH and cook for 3 hours. Do not open the lid during cooking, as this releases heat and extends the cooking time. The chicken should be tender and the sauce thickened by the end of the cooking time.
- After 3 hours, carefully remove the lid, tilting it away from you to avoid steam. Stir the chicken and sauce. The chicken should be fork-tender and the sauce slightly thickened. Add the roasted cashews and sliced scallions, folding them gently into the hot mixture. Let them warm through for about 5 minutes.
- Scoop the Kung Pao chicken over steamed jasmine rice. Sprinkle with toasted sesame seeds for extra crunch and aroma. Serve hot, with extra dried chilies on the side for those who want more heat.
