Before you start

Before starting, ensure your slow cooker is clean and ready for use. Prepare the ingredients by slicing the onion into clean, even half-moons and cutting the sparerib rack into individual sections if they are not already separated. Organize your workspace by measuring the brown sugar, red pepper flakes, and apple cider vinegar ahead of time.

This organization will make the assembly process smooth and efficient. Check that your slow cooker insert is dry before adding the ribs to ensure a clean start, and have a pair of tongs ready to help with the arrangement of the meat if needed.

Ingredients at a glance (5)
  • 4 lb pork spareribs, cut into sections
  • 1 large onion, sliced into half-moons
  • 1/2 cup brown sugar
  • 1 tbsp red pepper flakes
  • 1 cup apple cider vinegar

Instructions

Rib Arrangement

  1. Assemble the ribs
Place the pork sparerib sections into the slow cooker, arranging them in a ring pattern so they stand upright for even heat distribution during the long cooking process.
Look for Ribs are standing upright against the walls of the slow cooker insert.
Tip Ensure the ribs are cut into individual sections to fit properly.

The ribs should be standing upright in a ring, tightly packed but not crushed. This vertical positioning ensures that the heat circulates evenly around each piece of meat, promoting uniform cooking and allowing the sauce to settle at the base of the slow cooker while the steam helps tenderize the protein.

Seasoning Layer

  1. Add aromatics and seasoning
Scatter the half-moon onion slices evenly over the top of the ribs. Sprinkle the brown sugar and red pepper flakes over the onions and ribs to provide a sweet and spicy foundation.
Look for Onions and seasonings are evenly distributed over the meat.
Tip Use your hands to ensure the sugar and flakes cover all sections.

The onions, brown sugar, and pepper flakes should be distributed uniformly across the top of the ribs. This layer acts as a seasoning bed that will gradually melt and combine with the vinegar, creating a flavorful base that coats the ribs as they braise throughout the long cooking cycle.

Braising and Finishing

  1. Pour sauce and cook
Pour the apple cider vinegar over the ribs. Cover and cook on low for 8 hours. Once finished, check that the meat reaches an internal temperature of 145°F (63°C) and let it rest for 5 minutes before serving.
Look for Meat is tender and pulls away easily from the bone.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip The vinegar will help tenderize the connective tissue.

After 8 hours on low, the sauce should be aromatic and the ribs should look soft and glossy. The meat should easily yield to a fork, and the internal temperature must be at least 145°F (63°C) before you remove them from the heat to rest for the final step.

Common mistakes

A common mistake is overcrowding the slow cooker, which prevents even heat circulation and can lead to unevenly cooked ribs. Ensure the ribs are standing upright and not packed too tightly.

Another error is lifting the lid too frequently during the cooking process; every time the lid is opened, heat escapes, significantly increasing the total cooking time.

Finally, avoid using high-heat settings. While it might seem faster, high heat will toughen the pork rather than tenderizing it, resulting in dry, chewy meat instead of the desired melt-in-the-mouth texture.

How to tell it’s done

The ribs are perfectly done when the meat is extremely tender and begins to pull away from the bone with very little resistance. Using a meat thermometer, ensure the thickest part of the meat reaches an internal temperature of 145°F (63°C).

The onions should be completely soft and translucent, having melted into the sauce. Allow the ribs to rest for at least 5 minutes after removing them from the slow cooker; this short rest allows the juices to redistribute, ensuring the meat remains moist and flavorful when served.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
