Tips for success
For the best texture, serve the monkey bread warm, directly from the slow cooker or after transferring to a platter. The caramel is most luscious when warm, and the biscuit pieces are at their tender peak.
If the bread sits too long, the caramel may harden slightly; reheat in the microwave or return to the slow cooker on warm for a few minutes.
When scooping the bread out of the slow cooker, use a wide spatula or slotted spoon to lift it gently, allowing excess caramel to drip back. Arrange the pieces on a platter and spoon the remaining sauce from the bottom of the slow cooker over the top. This ensures every piece is coated and the presentation looks glossy and inviting.
Variations
- Chocolate Caramel Pretzel: Add 1/2 cup semisweet chocolate chips to the layers along with the caramel bits. The chocolate melts into the sauce, creating a rich, fudgy swirl. Use chocolate-covered pretzels for extra indulgence.
- Peanut Butter Caramel: Stir 1/4 cup creamy peanut butter into the melted butter and brown sugar mixture until smooth. The peanut butter adds a nutty depth that pairs well with the caramel and pretzels.
- Spiced Apple: Toss 1 cup diced fresh apple (such as Honeycrisp) with the biscuit pieces. Add 1/2 teaspoon apple pie spice to the cinnamon sugar. The apples soften during cooking and add a fruity note.
- Salted Bourbon Caramel: Replace 2 tablespoons of the melted butter with bourbon. Stir the bourbon into the butter-brown sugar mixture. The alcohol cooks off, leaving a subtle warmth that complements the caramel.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently before serving.
- Freezer
- Freeze the fully cooked and cooled monkey bread in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 20-30 seconds, or place the entire batch in a 350°F (175°C) oven for 10-15 minutes until warm.
Store leftover monkey bread in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days. The bread may absorb some of the caramel, softening the pretzels.
To reheat, place individual pieces on a microwave-safe plate and heat in 15-second bursts until warm, or return the entire batch to the slow cooker on warm for 30 minutes.
The biscuit pieces can be cut and coated in cinnamon sugar up to a day ahead; store them in a sealed container in the refrigerator. The butter-brown sugar mixture can also be prepared in advance and refrigerated.
When ready to cook, layer the ingredients and pour the sauce over, then cook as directed. This makes the recipe ideal for entertaining.
Serving ideas
Serve the monkey bread warm as a dessert or brunch centerpiece. Place the platter in the middle of the table and let everyone pull apart their own pieces. The sticky caramel and salty pretzels pair beautifully with a cup of coffee or a glass of cold milk. For a more indulgent treat, add a scoop of vanilla ice cream on the side.
This bread is best enjoyed immediately after cooking, while the edges are still slightly crisp and the caramel is gooey. If you have leftovers, they can be reheated and served the next day, but the texture will be softer.
The contrast of crunchy pretzels and tender dough is most pronounced in the first few hours, so plan to serve it soon after it finishes.

Crockpot Caramel Pretzel Monkey Bread

Ingredients
- 2 cans refrigerated buttermilk biscuit dough (16.3 oz each)
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
- 1 1/2 cups crushed crunchy pretzel twists
- 1 cup caramel bits
- 1/2 cup unsalted butter, melted
- 1/2 cup packed light brown sugar
- Flaky sea salt, for finishing, to taste
Instructions
- Open the cans of refrigerated biscuit dough and separate the biscuits. Use a sharp knife or kitchen shears to cut each biscuit into quarters. In a medium bowl, stir together the granulated sugar and ground cinnamon until evenly combined.
- Add the biscuit quarters to the cinnamon-sugar mixture and toss gently with your hands or a spatula until every piece is coated. The sugar should cling to the dough, creating a sweet crust as the bread bakes.
- Lightly grease the inside of a 6-quart slow cooker with butter or nonstick spray. Place half of the coated biscuit pieces in the bottom, then sprinkle with half of the crushed pretzels and half of the caramel bits. Repeat with the remaining biscuit pieces, pretzels, and caramel bits.
- In a small bowl, whisk together the melted butter and packed brown sugar until the sugar is mostly dissolved. Pour this mixture evenly over the layered biscuit pieces, pretzels, and caramels.
- Cover the slow cooker with the lid and cook on HIGH for 2 hours. The dough should puff up, turn golden brown on the edges, and the caramel and butter mixture will bubble around the crunchy pretzel pieces.
- Carefully remove the lid and let the monkey bread cool for 5 minutes. Use a large spoon or spatula to scoop the sticky bread onto a serving platter. Drizzle any remaining caramel sauce from the slow cooker over the top and sprinkle with flaky sea salt. Serve warm.
