Before you start

Before beginning, ensure your slow cooker is clean and dry. Have your parchment paper ready, cut to fit the bottom of your insert. Measure all ingredients accurately using standard measuring cups and spoons.

Ensure your candied orange peel is diced into small, uniform pieces to distribute the flavor evenly throughout the loaf. Clear a space on your countertop near an outlet to avoid moving the slow cooker once the batter is inside.

Ingredients at a glance (4)
  • 2 cups all-purpose flour
  • 1/3 cup diced candied orange peel
  • 2 tbsp gingerbread spice blend
  • 1/2 cup golden liquid honey

Instructions

Lining the slow cooker

  1. Prepare the slow cooker
Line the bottom of your slow cooker bowl with a piece of parchment paper to prevent sticking. Ensure the parchment covers the base completely, and check that the slow cooker is plugged in on a stable countertop surface.
Look for Parchment paper lies flat against the bottom.
Tip Use a round or oval piece of parchment to fit the shape of your slow cooker base perfectly.

The parchment paper should be securely placed at the bottom of the slow cooker, creating a clean, non-stick base. Check that the edges of the paper do not extend too far up the sides, which could interfere with the lid seal. The slow cooker should be ready to receive the ingredients with a stable, flat surface.

Layering the ingredients

  1. Combine ingredients
Pour the all-purpose flour into the bottom of the slow cooker. Scatter the diced candied orange peel evenly over the flour. Sprinkle the gingerbread spice blend over the mixture, and finally, pour the golden liquid honey over the top layer.
Look for Ingredients are layered and ready for cooking.
Tip Ensure the honey is poured in a steady stream to cover as much of the surface area as possible for even flavor distribution.

The ingredients should be added in clear, distinct layers, starting with the flour followed by the orange peel, spices, and honey.

Ensure the honey is distributed across the surface to allow it to sink through the flour as it warms. There is no need to stir the mixture at this stage, as the slow cooking will integrate everything.

Cooking the loaf

  1. Cook and serve
Cover the slow cooker with its lid and cook on low heat for approximately 3 hours. Once finished, carefully remove the loaf using the parchment paper edges. Let it rest for 15 minutes before slicing it into thick pieces for serving.
Look for The loaf is firm and springs back when touched lightly.
Tip Check the loaf at the 2.5-hour mark, as slow cooker temperatures can vary significantly between brands and models.

The loaf is done when it has risen and set, with a dark, aromatic crust forming where the honey has touched the bottom. The interior should be moist and steaming. Once the time is up, carefully lift the loaf out using the parchment paper and allow it to cool slightly before attempting to slice it.

Common mistakes

Avoid lifting the lid frequently during the cooking process, as each lift allows precious heat and steam to escape, significantly increasing the total cooking time.

Another common error is using too much flour, which can make the loaf heavy and tough; always level your measuring cups correctly. Finally, ensure the candied orange peel is not clumped together, as this can create pockets of moisture that prevent the cake from setting uniformly.

How to tell it’s done

The gingerbread loaf is finished when the center feels firm to a light touch and has pulled away slightly from the sides of the parchment paper.

If you insert a toothpick into the thickest part of the loaf, it should come out clean or with just a few moist crumbs attached. Do not overcook, as the sugars in the honey can darken quickly and turn bitter if left on the heat for too long.
