Tips for success

For the best texture, use chicken cutlets that are uniform in thickness. If some are thicker, place them at the edges of the slow cooker where heat is more even.

You can also pound them gently to an even thickness. Let the cooked chicken rest for a few minutes before serving to keep it juicy.

If you prefer a thicker sauce, you can mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the sauce during the last 30 minutes of cooking.

Or, after removing the chicken, simmer the sauce on the stovetop until reduced. For extra flavor, deglaze the slow cooker with a splash of chicken broth before adding the sauce, but this is optional.

Variations

  • Add Mushrooms: Sauté 8 oz sliced mushrooms in butter and add them to the slow cooker with the shallots. The mushrooms soak up the sauce and add an earthy depth.
  • Spicy Kick: Add 1/2 teaspoon crushed red pepper flakes or a minced jalapeño with the shallots for a subtle heat that balances the honey.
  • Herb Infusion: Stir in 1 teaspoon dried thyme or rosemary with the mustard. Fresh herbs like parsley or chives can be sprinkled on top before serving.
  • Bacon Twist: Crumble 4 slices of cooked bacon over the finished dish for a smoky, salty contrast to the sweet sauce.

Storage and make-ahead

Fridge
Store in an airtight container for up to 4 days. Reheat on the stovetop or microwave, adding a splash of cream or broth to loosen the sauce.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating gently.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little cream or broth if the sauce is too thick.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of cream or broth if needed.

You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. Add 30 minutes to the cooking time if starting from cold.

Serving ideas

Serve the chicken cutlets with a generous spoonful of the creamy sauce, over whipped garlic mashed potatoes. The sauce soaks into the potatoes, making every bite rich and comforting.

A simple green salad with a light vinaigrette provides a fresh contrast, or steamed green beans add color and crunch.

For a more casual meal, serve the chicken on toasted buns or in warm tortillas with a sprinkle of fresh herbs.

The leftovers are excellent chopped and tossed into salads or stuffed into quesadillas. This dish is versatile enough for a weeknight family dinner or a cozy gathering with friends.

Frequently asked questions

Can this recipe be made with chicken thighs instead of cutlets?
Yes, boneless, skinless chicken thighs work beautifully. They are more forgiving and stay moist. Cook on low for 3 to 4 hours, or until they reach 165°F (74°C). Thighs can be slightly larger, so adjust the cooking time as needed.
Why does the sauce look separated or curdled?
Curdling can happen if the slow cooker is too hot or if the cream is added too early. To avoid this, cook on low and don't stir. If it happens, whisk in a tablespoon of flour or cornstarch slurry to smooth it out. The sauce will still be safe to eat.
Can this be made dairy-free?
Yes, substitute the butter with a plant-based butter and use full-fat coconut cream instead of heavy cream. The flavor will be slightly different, but the sauce will still be creamy. Note that coconut cream may impart a subtle coconut taste.
How long can the chicken stay in the slow cooker on warm?
The chicken can stay on the warm setting for up to 2 hours, but it may continue to cook and become dry. For best results, remove the chicken and sauce to a serving dish after cooking, and keep warm separately if needed.
Can the sauce be thickened without cornstarch?
Yes, you can remove the chicken and simmer the sauce on the stovetop over medium heat for 10-15 minutes to reduce and thicken. You can also blend in a few tablespoons of the cooked shallots to naturally thicken the sauce.

Slow-Cooker Butter Cream Honey Dijon Chicken Cutlets

Prep 10 minCook 4 hTotal 4 h 10 minServes 4
Slow-cooker honey Dijon chicken cutlets in a creamy sauce with shallots, in a black crock

Ingredients

  • 4 boneless, skinless chicken breast cutlets (about 1 1/2 lb total)
  • 1/4 cup whole-grain Dijon mustard
  • 1/4 cup honey
  • 2 shallots, thinly sliced
  • 4 tbsp salted butter, cut into pats
  • 1/2 cup heavy whipping cream
  • Whipped garlic mashed potatoes, for serving

Instructions

  1. Place the chicken breast cutlets in the bottom of a 6-quart slow cooker in a single layer. They should fit snugly but not overlap too much.
  2. Spoon the whole-grain Dijon mustard and honey over the chicken, then scatter the sliced shallots evenly on top.
  3. Place the pats of salted butter on top of the chicken and pour the heavy whipping cream over everything. Do not stir.
  4. Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is cooked through and tender. The sauce will bubble gently around the edges.
  5. Insert an instant-read thermometer into the thickest part of a cutlet. It should read at least 165°F (74°C). If not, continue cooking for 15 more minutes and check again.
  6. Spoon the chicken and sauce over whipped garlic mashed potatoes. Serve hot, with extra sauce spooned over the top.
Contains: milk, mustard
