Before you start

Before you begin, ensure you have all your ingredients prepared and measured. Slice the chicken breasts into uniform strips about one inch wide, and slice the bell peppers into similar sized pieces to ensure they cook at the same pace.

If you are grating your own cheese, do this ahead of time and keep it chilled until you are ready to assemble. Clear off your counter space, ensure your slow cooker is clean and dry, and have your serving components like rice or tortillas ready to go so that you can serve immediately once the cooking time is complete.

Ingredients at a glance (11)
  • 2 lb chicken breasts, sliced into strips
  • 3 bell peppers, sliced
  • 8 oz block cream cheese
  • 1/2 cup cayenne-lime taco sauce
  • 1 tbsp fajita seasoning
  • 2 cups Monterey Jack cheese, shredded
  • Cooked rice or tortillas, for serving
  • Avocado slices, for serving
  • Sour cream, for serving
  • Fresh cilantro, chopped, for serving
  • Lime wedges, for serving

Instructions

Phase 1: Preparation and layering

  1. Assemble the casserole
Place the sliced chicken breasts and bell peppers into the bottom of the slow cooker. Add the block of cream cheese, the cayenne-lime taco sauce, and the fajita seasoning over the top of the chicken. Sprinkle the shredded Monterey Jack cheese evenly over all ingredients.
Look for Ensure the cream cheese is placed near the center so it melts evenly into the sauce.
Tip Slice the chicken into uniform strips to ensure even cooking throughout the four-hour cycle.

At this stage, your slow cooker should be filled with the raw chicken, peppers, and the cheese mixture layered on top. The ingredients should be neatly arranged to allow for even heat distribution.

Check that you have included all seasonings and that the cream cheese is situated towards the center of the vessel to ensure it melts properly into the surrounding sauce as the heat builds.

Phase 2: Slow cooking process

  1. Slow cook the chicken
Cover the slow cooker with the lid. Set the device to the low heat setting and cook for four hours. The chicken needs to reach an internal temperature of 165°F (74°C) to be fully cooked and safe to consume. During this time, the cream cheese will melt into the sauce to create a rich, spicy queso texture.
Look for The sauce should look bubbling and creamy, and the chicken should be tender when pierced with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the first three hours to maintain the necessary internal temperature and pressure.

During the four-hour cooking phase, the slow cooker will work to break down the proteins and meld the flavors. You should smell the spicy, tangy aroma of the cayenne and lime filling the kitchen. The mixture is ready to move to the final stage when the chicken is fully cooked through and the cheese has completely melted into a smooth, bubbling sauce that coats the chicken and peppers.

Phase 3: Final assembly

  1. Final assembly and serve
Once cooked, stir the mixture gently to combine the melted cheese and cream cheese into a smooth, thick sauce. Serve the hot chicken and pepper mixture immediately over warm rice or soft tortillas. Garnish each portion with fresh avocado slices, a dollop of sour cream, chopped cilantro, and a squeeze of fresh lime juice.
Look for The sauce should be thick enough to coat the back of a spoon.
Tip Add the fresh cilantro at the very last moment to preserve its bright, herbaceous flavor.

The final phase involves a gentle stir to unify the components into a cohesive, creamy casserole. The sauce should be glossy and thick, clinging to the chicken strips and peppers. Once everything is combined, it is ready to be plated over your choice of base. Check that the flavor is balanced and adjust with an extra squeeze of lime if you prefer a brighter, more acidic finish.

Common mistakes

A common mistake is using chicken breasts that are too thin, which can lead to them becoming overcooked and stringy during the long simmer. Another error is neglecting to stir the sauce after cooking; the cheese and cream cheese need to be fully integrated into the sauce at the end to achieve the desired creamy texture.

Finally, do not open the lid frequently, as this causes a significant loss of heat and extends the cooking time, which can lead to uneven results.

How to tell it’s done

The chicken is perfectly done when it reaches an internal temperature of 165°F (74°C). The meat should be tender and easily pull apart with a fork.

The sauce will be thick, creamy, and bubbling with a uniform golden-orange hue from the melted Monterey Jack and cayenne-lime sauce. If the sauce appears too thin, you can stir it vigorously to incorporate the melted cheese more thoroughly before serving.

  • Poultry: 165°F (74°C) in the thickest part
