Before you start

Before starting, make sure the chicken meatballs are thawed if frozen. If using homemade meatballs, have them ready. Soften the cream cheese by leaving it at room temperature for about 30 minutes.

Melt the butter in a small bowl or microwave. Measure out the buffalo sauce and ranch seasoning. Have the blue cheese crumbles and sliced scallions prepared for topping. Set your slow cooker to low and have all ingredients within reach.

Ingredients at a glance (8)
  • 2 lb chicken meatballs
  • 1 cup buffalo wing sauce
  • 4 tbsp unsalted butter, melted
  • 1 packet dry ranch seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup aged blue cheese crumbles
  • 1/4 cup sliced scallions
  • Celery sticks, for serving

Instructions

Phase 1: Assemble and Season

  1. Combine the Ingredients
Place the chicken meatballs in the slow cooker. Pour the buffalo wing sauce and melted butter over the meatballs. Sprinkle the dry ranch seasoning over the top. Add the cream cheese in spoonfuls, tucking it between the meatballs so it melts evenly.
Look for The meatballs are coated in a reddish-orange sauce with white cream cheese chunks visible.
Tip If the cream cheese is cold, it will melt more slowly; softening it helps it blend faster.
  2. Stir Gently
Use a spatula to gently stir the mixture, coating the meatballs with the sauce. Be careful not to break the meatballs apart. The cream cheese should be distributed but not fully melted yet.
Look for The sauce looks slightly chunky with cream cheese pieces.
Tip Stirring now helps the cream cheese melt into a smooth sauce later.

At this stage, the meatballs are coated in a reddish-orange sauce with visible chunks of cream cheese. The mixture looks vibrant and aromatic, with the tangy scent of buffalo sauce and ranch.

The cream cheese is not yet melted, but the ingredients are well distributed. Give everything a gentle stir to ensure the sauce coats the meatballs evenly before covering.

Phase 2: Slow Cook to Perfection

  1. Slow Cook on Low
Cover the slow cooker with the lid. Cook on LOW for 2.5 hours, until the sauce is bubbling and the cream cheese has melted into a creamy, smooth sauce. Avoid lifting the lid during cooking to maintain temperature.
Look for After 2.5 hours, the sauce is bubbly and the cream cheese has completely melted, creating a velvety texture.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce seems too thick, stir in a splash of water or chicken broth (not shown in video) – but the video does not include this step.
  2. Check the Meatballs
Check that the meatballs are cooked through by inserting an instant-read thermometer into the center of a meatball. It should read at least 165°F (74°C). If not, continue cooking for another 15-20 minutes and check again.
Look for The thermometer reads 165°F (74°C) or higher.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip The meatballs should be firm and no longer pink in the center.

After 2.5 hours on low, the sauce is bubbling gently at the edges and has transformed into a smooth, creamy, velvety texture. The cream cheese has fully melted, creating a rich sauce that clings to the meatballs. The kitchen smells of buffalo sauce, butter, and ranch. The meatballs are tender and cooked through, with no pink in the center.

Phase 3: Finish and Serve

  1. Add the Toppings
Once the meatballs are cooked and the sauce is creamy, sprinkle the blue cheese crumbles and sliced scallions over the top. Let them sit for a minute so the cheese softens slightly.
Look for The top is covered with white and green crumbles.
Tip Add the blue cheese right before serving so it stays distinct.
  2. Serve with Celery Sticks
Serve the meatballs directly from the slow cooker, keeping it on the warm setting. Offer celery sticks on the side for dipping and scooping up extra sauce.
Look for The meatballs are glistening in the creamy sauce with celery on the side.
Tip The celery adds a fresh crunch that balances the rich sauce.

The meatballs are topped with crumbled blue cheese and sliced scallions, adding a pop of white and green. The blue cheese begins to soften slightly from the heat, while the scallions provide a fresh, oniony bite. The dish is ready to serve directly from the slow cooker, with celery sticks on the side for a crunchy contrast.

Common mistakes

One common mistake is lifting the lid too often during cooking, which lets heat escape and extends the cooking time. Another is adding the cream cheese too early and not stirring, which can result in a lumpy sauce.

Also, be careful not to overcook the meatballs; they can become dry if left on high for too long. Finally, avoid using a too-hot buffalo sauce if you prefer mild heat, and always adjust to your taste.

How to tell it’s done

The meatballs are done when they are cooked through and the sauce is bubbly and creamy. To check, insert an instant-read thermometer into the center of a meatball; it should read at least 165°F (74°C).

The sauce should be smooth and velvety, with no lumps of cream cheese. The meatballs should be tender and juicy, not dry or tough. If the sauce seems too thin, let it cook uncovered for a few minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
