Before you start
Before starting, ensure the slow cooker is clean and dry. Measure out all ingredients. If using fresh broccoli, wash and cut into bite-size florets.
If using bacon, cook until crispy and crumble. Soften the cream cheese by leaving it at room temperature for 30 minutes. Have the shredded cheese ready. No other prep is needed.
Ingredients at a glance (6)
- 2 lb frozen tater tots
- 1 cup crispy crumbled bacon
- 2 cups fresh broccoli florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 8 oz block cream cheese, softened
- 2 cups shredded Colby-Jack cheese
Instructions
Layer and Set
- Layer the BasePlace the frozen tater tots in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the crispy crumbled bacon evenly over the tater tots.Look for The tater tots should cover the bottom completely, with bacon scattered over.Tip No need to thaw the tater tots; they will cook perfectly in the slow cooker.
- Add Broccoli and SoupScatter the fresh broccoli florets over the tater tot and bacon mixture. Spoon the condensed cream of broccoli soup over the top, spreading it slightly to cover some of the ingredients.Look for The soup should be dolloped over the broccoli, not fully mixed in.Tip Cut larger florets into bite-size pieces for even cooking.
- Top with CheesesPlace the softened block of cream cheese in the center of the slow cooker. Sprinkle the shredded Colby-Jack cheese evenly over the entire mixture.Look for The cream cheese sits on top; the shredded cheese covers the surface.Tip Soften the cream cheese beforehand so it melts more smoothly.
After layering, the slow cooker should be filled with distinct layers: tater tots on the bottom, then broccoli and bacon, topped with soup and cheeses.
The cream cheese block sits in the center, surrounded by shredded cheese. The ingredients should look colorful and appetizing, with the soup and cheese creating a creamy top.
Slow Cook and Melt
- Slow CookCover the slow cooker and cook on low for 4 hours, or until the tater tots are tender and the cheese is melted and bubbly. Do not stir during cooking.Look for The edges will be bubbling and the cheese fully melted.Tip Resist the urge to lift the lid; each peek adds cooking time.
After 4 hours on low, the cheese should be fully melted and bubbly, the soup and cream cheese blended into a smooth sauce, and the tater tots tender. The aroma of broccoli and cheese will fill the kitchen. The edges may be slightly browned, and the mixture should be hot and steaming.
Finish and Serve
- ServeOnce cooked, stir gently to combine the creamy sauce. Serve hot directly from the slow cooker or spoon onto plates.Look for The mixture should be creamy and the tater tots fork-tender.Tip Let it rest for a few minutes after stirring to thicken slightly.
When stirred, the mixture should be creamy and cohesive, with tater tots coated in cheese sauce and broccoli still bright green. The bacon bits are visible throughout. The bake should hold together when spooned, and the cheese should stretch slightly. Serve hot for the best texture.
Common mistakes
One common mistake is lifting the lid too often, which releases heat and extends cooking time. Another is using frozen broccoli without thawing, which can release excess water and make the dish watery.
Over-stirring during cooking can break up the tater tots; stir gently only at the end. Also, ensure the cream cheese is softened to avoid lumps.
How to tell it’s done
The bake is done when the tater tots are tender and easily pierced with a fork, and the cheese is fully melted and bubbling around the edges.
The internal temperature should reach at least 165°F (74°C) if checking. Let it rest for 5 minutes before serving to allow the sauce to set slightly.
