Before you start

Before beginning, ensure the cabbage is thoroughly washed and shredded into uniform strips about half an inch wide. Peel and slice the sweet onions into thin, consistent half-moons.

Have your measuring cup ready for the broth and ensure the slow cooker insert is clean and dry. Preparing these components in advance allows for a smooth assembly process, ensuring the vegetables are ready to be layered immediately without any delay.

Ingredients at a glance (4)
  • 2 large sweet onions, thinly sliced
  • 1 head white cabbage, shredded
  • 1 tsp caraway seeds
  • 1 cup vegetable broth

Instructions

Layering the vegetables

  1. Layer the vegetables
Place the thinly sliced sweet onions into the bottom of the slow cooker to create a flavor base. Pile the shredded white cabbage on top of the onions to ensure even cooking throughout the process.
Look for cabbage is evenly distributed over the onions
Tip Slice the onions uniformly so they soften and caramelize at the same rate during the slow cooking process.

At this stage, the slow cooker insert contains a base layer of onions topped with a mound of shredded cabbage. The ingredients should be arranged neatly, with the onions sitting at the bottom of the vessel. Ensure the cabbage is piled high but not compressed, as this allows the heat to circulate properly during the initial phase of the cooking process.

Adding aromatics and liquid

  1. Season and add liquid
Sprinkle the caraway seeds over the shredded cabbage. Carefully pour the vegetable broth over the top of the ingredients, ensuring it reaches the bottom layers to provide moisture for the braise.
Look for broth is poured evenly
Tip Use high-quality vegetable broth to enhance the depth of flavor in the finished dish.

The caraway seeds should be visible on the surface of the cabbage, and the vegetable broth should be poured steadily over the top. The liquid will begin to settle toward the bottom of the slow cooker, interacting with the onions.

Check that the broth has been distributed evenly so that all layers are sufficiently moistened before the lid is secured for the long cook.

Final braising phase

  1. Slow cook and serve
Cover the slow cooker and cook on low for 4 hours until the cabbage is tender and glossy. Once finished, stir the mixture gently to combine the onions and cabbage before serving warm.
Look for cabbage is tender and the liquid is reduced
Tip Check the texture of the cabbage after 3 hours if using a smaller slow cooker to prevent overcooking.

After four hours, the cabbage should be soft, glossy, and reduced in volume. The aroma of caraway and sweet onions should be prominent. Before serving, give the mixture a gentle stir to incorporate the onions and juices throughout the cabbage. The final result should be a cohesive, tender, and flavorful side dish ready to be plated and served while steaming hot.

Common mistakes

A common mistake is overcrowding the slow cooker without allowing enough space for the cabbage to steam effectively. While the cabbage will shrink, ensure it is not packed so tightly that the broth cannot circulate.

Another error is failing to distribute the caraway seeds evenly, which can lead to pockets of intense flavor. Finally, avoid lifting the lid frequently during the cooking process, as this releases steam and significantly increases the required cook time.

How to tell it’s done

The dish is ready when the cabbage has lost its raw crunch and become soft and translucent. It should be tender enough to pierce easily with a fork, and the volume of the cabbage will have reduced significantly.

The onions should be completely soft and have melded into the cabbage mixture. The liquid at the bottom should be fragrant and slightly thickened from the softened onions and cabbage juices.

Coming up in Part 3: common questions

  • Can this be made in a Dutch oven instead of a slow cooker?
  • Why is the cabbage not tender after four hours?
  • Can the caraway seeds be replaced if they are not preferred?
