Before you start

Before starting, ensure that all your ingredients are prepared. Peel and slice your carrots into uniform rounds to ensure they cook at the same rate. Chop the onions into small, consistent pieces to help them melt into the sauce.

Have your beef broth measured out and ready. Ensure your slow cooker is clean and placed on a flat, heat-resistant surface with easy access to a power outlet to avoid any kitchen accidents.

Ingredients at a glance (5)
  • 2 lb veal stew meat, cut into chunks
  • 4 carrots, peeled and sliced into rounds
  • 1 yellow onion, chopped
  • 1 tsp ground cumin
  • 2 cups beef broth

Instructions

Preparation and layering

  1. Assemble the ingredients
Place the veal pieces into the bottom of the slow cooker. Scatter the sliced carrots and chopped onions evenly over the meat to ensure they cook through properly.
Look for Ensure the veal is distributed in an even layer across the bottom of the slow cooker insert.
Tip Layering the vegetables on top helps them steam gently while the meat braises in the juices.

At the end of this phase, the ingredients are neatly layered within the slow cooker. You should see the veal at the bottom, topped with a colorful arrangement of carrots and onions.

The arrangement looks orderly, and everything is ready for the seasoning and liquid. Check that the vegetables are evenly distributed so they can cook uniformly alongside the meat throughout the long braising process.

Seasoning and liquid addition

  1. Season and add liquid
Sprinkle the ground cumin over the top of the vegetables and meat. Carefully pour the beef broth over the entire mixture, ensuring everything is partially submerged for even cooking.
Look for The liquid should just partially cover the ingredients, allowing them to braise effectively during the slow cooking process.
Tip The cumin will infuse the broth, creating a fragrant base for the braised meat.

Once the cumin is sprinkled and the broth is poured, the contents should look well-integrated. The cumin should be visible on the surface of the vegetables, and the broth should be visible at the bottom of the insert. Ensure the liquid level is sufficient to partially submerge the ingredients, which is the key to maintaining moisture during the long cooking time before the lid goes on.

Slow cooking to tenderness

  1. Slow cook and serve
Cover the slow cooker and cook on low for 8 hours until the veal reaches an internal temperature of 145°F (63°C). Let the meat rest for 5 minutes before serving on a plate.
Look for The meat should be tender enough to pull apart easily with a fork, and the carrots should be soft.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check the temperature in the thickest part of the meat to ensure it is cooked through safely.

After the long cooking duration, the kitchen should be filled with a savory, aromatic scent. When you lift the lid, the meat will look darkened and tender, and the carrots will be soft and glazed in the reduced broth.

The liquid will have transformed into a rich, flavorful sauce. Check that the meat pulls apart easily and verify the temperature before serving to ensure the dish is perfectly finished.

Common mistakes

A common mistake is cutting the veal pieces into sizes that are too small, which can cause them to become overcooked and stringy during the long cooking duration. Aim for chunks roughly one to two inches in size.

Another error is failing to ensure the lid of the slow cooker is fully sealed, which allows heat and moisture to escape, potentially leading to a tougher texture. Always check that the seal is secure.

How to tell it’s done

The veal is done when it is fork-tender, meaning it can be easily pierced and pulled apart with minimal resistance. Use a meat thermometer to verify that the internal temperature has reached at least 145°F (63°C). The carrots should be soft and easily pierced with a knife. Once these conditions are met, turn off the slow cooker and allow the meat to rest for a few minutes before plating.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
