Tips for success

For a deeper flavor, you can sear the beef chunks in a hot skillet with a small amount of oil before placing them into the slow cooker, although this step is optional.

Searing adds a caramelized crust to the exterior of the meat, which contributes a complex depth to the final sauce. If choosing to sear, ensure the pan is very hot and do not overcrowd it, as this will steam the meat instead of browning it.

If the sauce appears too thin after the cooking is complete, you can remove the lid for the final 30 minutes of cooking on high to allow some of the liquid to evaporate.

Alternatively, you can carefully remove the beef and reduce the liquid in a saucepan over medium-high heat until it reaches your desired consistency. Be sure to return the meat to the sauce only after it has thickened to avoid overcooking.

Variations

  • Herb-Infused Beef: Add a bundle of fresh rosemary and parsley tied with kitchen twine during the cooking process for a more aromatic and earthy flavor profile. Remove the herb bundle before serving.
  • Root Vegetable Addition: Incorporate cubed carrots and parsnips along with the onions and mushrooms to add sweetness and heartiness, creating a more substantial one-pot meal.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days in the refrigerator.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat gently in a saucepan over medium-low heat until piping hot throughout, adding a splash of water or broth if the sauce has thickened too much.

Transfer any leftovers to an airtight container and store in the refrigerator within two hours of cooking. The flavors often improve after a day as the ingredients have more time to meld. When storing, ensure the beef is completely covered by the sauce to prevent it from drying out, as the exposure to air can significantly degrade the quality and texture of the refrigerated meat.

This dish is an excellent candidate for making ahead, as it reheats beautifully. You can prepare the entire recipe a day in advance, allow it to cool, and store it in the refrigerator.

Reheat it gently on the stovetop or in the slow cooker until it is heated through. The flavors will be even more pronounced after a night in the fridge, making it a convenient option for stress-free entertaining.

Serving ideas

Serve this braised beef over a bed of creamy mashed potatoes or buttered egg noodles to soak up the rich, wine-infused pan juices. A side of roasted root vegetables or a crisp green salad with a sharp vinaigrette provides a nice textural contrast to the soft, tender beef and the savory mushrooms, balancing the meal with freshness and crunch.

For a more rustic presentation, serve the beef directly from the slow cooker into warmed shallow bowls. Garnish with a sprinkle of fresh herbs if desired, though the dish is flavorful enough to stand on its own.

Ensure each serving includes a generous portion of the mushrooms and onions, as these components are essential to the overall eating experience of this classic braised dish.

Frequently asked questions

Can a different cut of beef be used?
Yes, a chuck roast is recommended due to its high fat and collagen content, but a brisket or round roast can also be used. Ensure the meat is cut into uniform pieces to promote even cooking throughout the process.
Is it necessary to use red wine?
Red wine adds essential acidity and depth to the sauce. If preferred, it can be substituted with a high-quality beef stock mixed with a splash of red wine vinegar or balsamic vinegar to replicate the acidity.
Why does the beef need to rest?
Resting the meat for at least 5 minutes allows the juices to redistribute throughout the fibers. This ensures that the beef remains moist and tender when sliced or served, preventing the juices from running out immediately upon serving.
