Before you start

Before starting, slice the kielbasa diagonally into 1/2-inch thick medallions. Slice the cremini mushrooms if not pre-sliced. Have the tortellini, Alfredo sauce, Boursin wheel, and shredded fontina measured and ready.

No need to pre-cook anything — this is a dump-and-go recipe. Ensure the slow cooker is clean and dry. If you prefer a thicker sauce, you can whisk a tablespoon of cornstarch with a little water and stir it in during the last 30 minutes of cooking.

Ingredients at a glance (6)
  • 2 lb smoked kielbasa, sliced diagonally
  • 20 oz fresh spinach-and-cheese tortellini
  • 8 oz cremini mushrooms, sliced
  • 15 oz Alfredo sauce
  • 1 wheel garlic-and-herb Boursin cheese
  • 1 cup shredded Italian fontina cheese

Instructions

Layer and Top

  1. Layer the Ingredients
Place the sliced smoked kielbasa in an even layer in the bottom of a 6-quart slow cooker. Top with the fresh spinach-and-cheese tortellini, then scatter the sliced cremini mushrooms over the tortellini. Pour the Alfredo sauce evenly over the top.
Look for The slow cooker should be about half full with ingredients layered evenly.
Tip No need to stir — the layers will meld during cooking.
  2. Add the Cheeses
Place the wheel of garlic-and-herb Boursin cheese in the center of the slow cooker, then sprinkle the shredded fontina cheese evenly over the entire surface.
Look for The Boursin wheel sits on top, surrounded by the fontina shreds.
Tip The Boursin will melt into a creamy sauce as it cooks.

At the end of this phase, the slow cooker contains distinct layers: kielbasa on the bottom, tortellini and mushrooms in the middle, and the Alfredo sauce poured over.

The Boursin wheel sits in the center, surrounded by shredded fontina. The ingredients should look fresh and colorful, with the cheeses not yet melted. This is the 'dump it in' stage — everything is ready to cook.

Slow Cook and Stir

  1. Slow Cook Until Bubbling
Cover the slow cooker and cook on LOW for 4 hours, or until the tortellini are tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours to keep the heat consistent.
Look for The sauce should be gently bubbling and the cheese fully melted.
Tip If the sauce seems too thin, cook uncovered for the last 30 minutes.
  2. Stir Gently
Once the tortellini are tender, stir the mixture gently to combine the melted Boursin and fontina into the sauce. Be careful not to break the tortellini.
Look for The sauce should be smooth and creamy, coating the tortellini and kielbasa.
Tip Use a wooden spoon or silicone spatula to avoid mashing the pasta.

After 4 hours on LOW, the sauce should be bubbling gently, and the cheese fully melted. The kitchen will smell of garlic, herbs, and smoky sausage. The tortellini should be tender but not falling apart. Stirring gently will create a creamy, cohesive sauce that coats every piece. If the sauce looks too thin, continue cooking uncovered for a few more minutes.

Serve and Enjoy

  1. Serve Hot
Ladle the creamy kielbasa tortellini onto plates or into bowls. Serve immediately while hot and bubbling.
Look for The dish should be steaming and the cheese stretchy.
Tip Garnish with fresh parsley or cracked black pepper if desired, though the video does not show it.

The final dish should be steaming, with a rich, creamy sauce and visible pieces of kielbasa, tortellini, and mushrooms. The cheese should pull in long strands when lifted. Serve immediately on plates or bowls, and watch it disappear. The texture is silky, the flavor is savory and satisfying, and the whole dish looks as good as it tastes.

Common mistakes

One common mistake is lifting the lid too often during cooking — this releases heat and extends cooking time. Another is overcooking the tortellini, which can make it mushy.

Stick to the recommended 4 hours on LOW. Also, avoid stirring too early, as the tortellini can break apart. If the sauce seems too thin at the end, cook uncovered for the last 30 minutes to reduce it.

How to tell it’s done

The dish is done when the tortellini are tender and the sauce is bubbling around the edges. The cheese should be fully melted and the sauce creamy.

If you use a food thermometer, the internal temperature should reach 165°F (74°C) for food safety, though the dish is fully cooked when the pasta is tender. Let it rest for 5 minutes before serving to allow the sauce to thicken slightly.
