Tips for success

For a more intense flavor, prepare the chili a day in advance. The resting time in the refrigerator allows the spices and the sweetness of the brown sugar to meld more effectively. Reheat gently on the stove or in the microwave before serving to ensure the best texture and taste after the flavors have had time to develop.

Adjust the heat level of the chili by adding a dash of hot sauce or a sprinkle of crushed red pepper flakes if a spicier profile is preferred. Since the base recipe is mild, it serves as a perfect canvas for customization.

Taste the chili after the full cooking time and adjust the salt levels if necessary, as different brands of chili seasoning vary in salt content.

Variations

  • Spicy Bourbon Chili: Add two minced jalapeños or a tablespoon of chipotle powder to the slow cooker during the layering phase for a significant heat boost that complements the sweetness of the brown sugar.
  • Vegetable-Packed Chili: Incorporate diced bell peppers, onions, or corn during the layering phase to add extra texture and color to the dish without altering the overall flavor profile of the bourbon and tomato base.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freeze in freezer-safe bags or containers for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat on the stovetop over low heat, stirring occasionally, or in the microwave in 1-minute intervals until hot throughout.

Store any leftover chili in an airtight container in the refrigerator for up to three days. To maximize freshness, ensure the chili has cooled to room temperature, but do not leave it out for more than two hours.

Label the container with the date to keep track of its shelf life and ensure it is consumed within the recommended window for optimal quality.

This dish is an excellent candidate for making ahead, as the flavors often improve after sitting. Prepare the entire recipe as directed, let it cool completely, and then store it in the refrigerator.

When ready to serve, reheat the chili slowly on the stovetop over low heat, adding a splash of water or beef stock if the consistency has become too thick after cooling.

Serving ideas

Serve the chili in deep bowls to retain heat. It pairs beautifully with classic toppings such as shredded cheddar cheese, a dollop of sour cream, or fresh chopped cilantro. For a crunchy element, consider serving it alongside cornbread or tortilla chips, which provide a nice texture contrast to the thick, hearty chili.

For a larger gathering, set up a chili bar with various toppings and let guests customize their own bowls. This makes the dish interactive and ensures everyone gets their preferred combination of flavors.

The richness of the bourbon and brown sugar makes this a standout main course for casual dinners or game-day gatherings where comfort food is the priority.

Frequently asked questions

Can the bourbon be omitted?
Yes, the bourbon can be omitted without compromising the safety or structure of the recipe. For a similar depth of flavor, replace it with beef broth mixed with a small amount of apple cider vinegar, which provides the necessary acidity to balance the sweetness of the brown sugar.
Is it necessary to brown the beef first?
Browning the beef is optional in this recipe. While searing adds a deeper flavor through the Maillard reaction, the slow cooker method effectively cooks the beef in its own juices, resulting in a very tender texture that works well for a classic chili consistency.
How can the consistency be adjusted if the chili is too thin?
If the chili is too thin after cooking, remove the lid for the final 30 to 60 minutes of cooking time. This allows excess moisture to evaporate, which naturally thickens the sauce. Alternatively, mash a few of the kidney beans against the side of the cooker to release their starches, which will also help thicken the base.

  • 1 packet chili seasoning
  • 28 oz crushed tomatoes
  • 1/4 cup bourbon
  • 1/3 cup brown sugar
