Tips for success
For a deeper color and flavor in your stew, you can quickly sear the beef cubes in a hot skillet with a small amount of oil before adding them to the slow cooker. This caramelization process adds a layer of depth to the final sauce that is highly recommended if time allows. However, even without this step, the slow cooker will yield a fantastic result.
If you prefer a thicker sauce, you can whisk a tablespoon of cornstarch with a splash of cold water and stir it into the stew during the last 30 minutes of cooking.
This will give your gravy a professional, velvety consistency. Always ensure the stew is hot enough to activate the starch, and adjust the seasoning with salt and pepper to your preference before serving.
Variations
- Root Vegetable Medley: Replace half of the parsnips with carrots or diced turnips for a more varied texture and a slightly sweeter flavor profile. These vegetables hold up well to the long cooking time.
- Savory Herb Infusion: Add a sprig of fresh thyme or rosemary to the slow cooker at the beginning of the cooking process for an extra layer of herbal aromatics that complements the beef perfectly.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months.
- Reheat
- Reheat on the stovetop over low heat until simmering or in the microwave in 1-minute intervals until hot throughout.
Allow the stew to cool completely to room temperature, but do not leave it out for more than two hours. Once cooled, transfer the stew into airtight containers to prevent it from absorbing other flavors in the refrigerator.
Properly stored, it will maintain its quality for up to three days. For longer storage, the stew freezes exceptionally well and can be kept for up to three months.
This stew is an excellent candidate for making ahead, as the flavors often deepen and improve after sitting for a day or two in the refrigerator. Simply prepare the recipe as directed, let it cool, and store it in an airtight container.
When you are ready to serve, reheat it gently on the stovetop or in the microwave, adding a tiny splash of water or broth if the sauce has thickened too much.
Serving ideas
Serve this beef stew in wide, shallow bowls to showcase the hearty chunks of beef and parsnips. It pairs beautifully with a side of crusty, artisanal bread, which is perfect for mopping up every last drop of the rich, honey-infused gravy. A simple green salad with a bright vinaigrette provides a nice contrast to the warmth and depth of the stew.
Consider garnishing each bowl with a sprinkle of fresh herbs like chopped parsley or chives to add a pop of color and freshness.
The sweetness of the chestnut honey works particularly well with the earthy notes of the parsnips, making this a sophisticated choice for a winter dinner. Ensure the stew is served piping hot to fully enjoy the aromatic spices.
