Tips for success
For a deeper flavor profile, consider lightly browning the meatballs in a pan before adding them to the slow cooker, although this is optional. Adding a splash of lemon juice just before serving can brighten the flavors of the sauce and provide a nice contrast to the warm spices.
If you prefer a thinner sauce, you can add a small amount of extra broth or water during the last hour of cooking to adjust the consistency to your liking.
When serving, consider garnishing the dish with freshly chopped parsley or cilantro to add a pop of color and freshness. If you want to increase the vegetable content, you can easily incorporate other sturdy vegetables like celery or parsnips.
Always store any leftovers promptly; let them cool for no more than two hours before transferring to an airtight container and placing them in the refrigerator to ensure safety and maintain quality for future meals.
Variations
- Spicy Meatball Variation: Add a teaspoon of harissa paste or red pepper flakes to the broth for a spicy kick that complements the ras-el-hanout and adds depth to the overall flavor profile of the stew.
- Herbed Meatball Variation: Incorporate a handful of fresh chopped parsley and cilantro into the slow cooker during the final 30 minutes of cooking for a fresh, herbal finish that brightens the entire dish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in an airtight container for up to 2 months. Thaw in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat or in the microwave until steaming hot throughout.
Store any leftovers in an airtight container in the refrigerator for up to three days. Ensure the food has cooled completely before sealing the container. When reheating, do so thoroughly until the dish is steaming hot throughout.
If freezing, portion the stew into freezer-safe containers, leaving a little room for expansion, and consume within two months for the best flavor and texture. Always thaw frozen leftovers in the refrigerator overnight before reheating.
This dish is excellent for meal prepping as the flavors often improve after sitting for a day. You can chop all the vegetables and store them in the refrigerator a day in advance.
The entire stew can be prepared ahead of time and kept in the refrigerator, then reheated on the stove or in the slow cooker when needed. Simply prepare the couscous fresh at the time of serving to ensure the best texture.
Serving ideas
Serve the beef meatball and vegetable stew in wide, shallow bowls to showcase the beautiful colors of the vegetables and the tender meatballs. Place a generous portion of fluffy couscous in the center of each bowl, then ladle the hot stew directly over the top. This allows the couscous to soak up the savory tomato broth, enhancing every bite with the complex flavors of the ras-el-hanout spice blend.
For a balanced presentation, ensure each serving includes a variety of the colorful vegetables and an equal portion of the meatballs. You may provide a side of warm flatbread to help scoop up any remaining sauce. A light side salad with a simple vinaigrette can also be served alongside this dish to provide a crisp contrast to the soft, comforting textures of the slow-cooked meat and vegetables.
