Tips for success
To make the cheese extra stretchy, add it in two batches: half stirred in during the last 5 minutes of cooking, and half sprinkled on top just before serving. This creates both a creamy integration and a gooey, pull-apart topping. Use full-fat Oaxaca cheese for the best melt—low-fat versions can turn grainy.
For a more intense birria flavor, let the cooked dish sit for 5 minutes before serving. This allows the noodles to continue absorbing the consommé, making them even more flavorful.
If you like a saucier bowl, add a splash of extra consommé just before serving. And don't skip the lime—its acidity cuts through the richness beautifully.
Variations
- Spicy Birria Ramen: Add 1–2 sliced jalapeños or a drizzle of hot sauce to the slow cooker along with the consommé. For extra heat, sprinkle with crushed red pepper flakes when serving.
- Vegetarian Birria Ramen: Replace the beef with roasted portobello mushrooms or jackfruit and use a rich vegetable consommé seasoned with smoked paprika and chipotle. Omit the cheese or use a plant-based version.
- Cheesy Birria Ramen Bake: After simmering, transfer the mixture to a baking dish, top with extra Oaxaca cheese, and broil for 2–3 minutes until bubbly and golden. Serve with lime wedges.
- Breakfast Birria Ramen: Top each bowl with a fried egg and a sprinkle of crumbled queso fresco. The runny yolk adds richness, but for food safety, cook the egg until the yolk is set.
Storage and make-ahead
- Fridge
- Store leftover birria ramen in an airtight container in the fridge for up to 3 days. Add a splash of broth when reheating to restore the saucy texture.
- Freezer
- The birria ramen can be frozen in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating gently.
- Reheat
- Reheat individual portions in the microwave for 1–2 minutes, or on the stovetop over medium heat with a splash of broth. Stir occasionally until heated through.
Leftover birria ramen can be stored in an airtight container in the refrigerator for up to 3 days. The noodles will continue to absorb liquid, so when reheating, add a splash of beef broth or water to loosen the mixture.
Reheat gently in the microwave or on the stovetop until piping hot. The avocado and fresh toppings are best added after reheating.
The shredded beef birria and consommé can be made up to 3 days ahead and kept refrigerated. When ready to serve, reheat them together in the slow cooker on HIGH for about 30 minutes, then proceed with adding the ramen and cheese. This makes weeknight dinner a breeze—just assemble and simmer for 20 minutes.
Serving ideas
Serve the birria ramen immediately after cooking, while the cheese is still stretchy and the noodles are at their best. Ladle generous portions into deep bowls, making sure each gets a good mix of beef, noodles, and melted cheese.
The toppings are essential—diced onion adds crunch, avocado brings creaminess, crema adds tang, cilantro offers freshness, and a squeeze of lime brightens the whole bowl.
This dish is substantial enough to be a main course on its own. Pair it with a simple side salad or some tortilla chips for dipping into the extra consommé.
For a fun twist, set up a topping bar so everyone can customize their bowl. The leftovers are just as delicious cold, though they're best enjoyed warm.

Slow-Cooker Birria Ramen with Melted Oaxaca Cheese

Ingredients
- 2 lb shredded cooked beef birria
- 4 cups red birria consommé
- 4 cakes ramen noodles
- 3 cups shredded Oaxaca cheese
- 1/2 cup diced raw onion
- 1 avocado, cubed
- 1/2 cup crema
- 1/4 cup fresh cilantro leaves
- 2 key limes, halved
Instructions
- Place the shredded cooked beef birria and red birria consommé in the slow cooker. Stir gently to combine, spreading the beef evenly across the bottom of the pot.
- Tuck the ramen cakes into the liquid, submerging them as much as possible. Press them down gently with a spoon so they begin to soften.
- Sprinkle the shredded Oaxaca cheese evenly over the top of the ramen and beef mixture.
- Cover the slow cooker and cook on HIGH for 20 minutes, until the noodles have absorbed much of the consommé and the cheese is fully melted and stretchy.
- After 20 minutes, lift the lid and check the noodles: they should be tender but still have a slight bite. If they are too firm, cover and cook for 5 more minutes.
- Use tongs to gently toss the noodles, beef, and cheese together, making sure the cheese is distributed throughout and the noodles are coated in the consommé. Let it rest for 3 minutes before slicing.
- Ladle the birria ramen into deep serving bowls, making sure each portion gets plenty of beef, noodles, and melted cheese.
- Top each bowl with diced raw onion, cubed avocado, a drizzle of crema, fresh cilantro leaves, and a squeeze of key lime.
