Before you start

Before starting, ensure the chicken is completely thawed if it was previously frozen, as this is crucial for food safety. Have your slow cooker clean and ready on a level, heat-resistant surface.

Prepare the onions by slicing them into half-moons and gather your barbecue seasoning and sauce so that assembly is quick and efficient once you begin the process.

Ingredients at a glance (4)
  • 1 whole chicken, about 4 pounds
  • 1 large yellow onion, sliced
  • 2 tbsp barbecue seasoning packet
  • 1 cup barbecue sauce

Instructions

Bed preparation

  1. Prepare the slow cooker bed
Place the sliced onions into the bottom of the slow cooker to create a base. Position the whole chicken directly on top of the onion slices, ensuring it sits level within the cooker.
Look for Onions cover the bottom of the slow cooker.
Tip Ensure the chicken is fully thawed before starting to guarantee even cooking.

At the end of this phase, the onions should be evenly distributed across the bottom of the slow cooker. The chicken should be positioned centrally, providing a stable foundation for the seasoning.

Ensure the power cord is clear of any water or heat sources before turning the unit on to the low setting, as this initial setup is vital for proper heat circulation.

Seasoning application

  1. Season and glaze
Sprinkle the barbecue seasoning evenly over the surface of the raw chicken. Pour the barbecue sauce over the seasoned chicken, ensuring it covers as much of the surface as possible.
Look for The chicken is coated with seasoning and sauce.
Tip Use your hands to gently rub the seasoning into the skin if desired.

The chicken should be thoroughly coated with the barbecue seasoning, and the sauce should be drizzled evenly to cover the top. Check that the sauce has begun to settle around the base of the chicken. The aromatics of the seasoning should be noticeable as you prepare to close the lid, signaling that the flavor infusion process is ready to begin.

Slow cooking

  1. Slow cook and serve
Cover the slow cooker and cook on low for 6 to 8 hours until the chicken reaches an internal temperature of 165°F (74°C). Carefully remove the chicken, shred it using two forks, and serve immediately.
Look for The meat pulls away easily from the bone.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Always check the thickest part of the breast to ensure it is cooked through.

During the final phase, the chicken will become very tender and fragrant. Check that the juices at the bottom of the pot are bubbling slightly. Before serving, verify the internal temperature of the thickest part of the meat to confirm it is fully cooked, then shred the chicken directly in the pot to absorb the remaining sauce before moving it to a plate.

Common mistakes

A common mistake is overcrowding the slow cooker with too many additional vegetables, which can release excess water and dilute the barbecue sauce.

Another error is lifting the lid too frequently, which allows heat to escape and significantly increases the cooking time. Always keep the lid closed to ensure the internal temperature remains consistent and the steam builds up properly for tender results.

How to tell it’s done

The chicken is perfectly cooked when the meat is tender and pulls away easily from the bone with a fork.

Use a reliable digital meat thermometer inserted into the thickest part of the breast, without touching the bone, to verify that it has reached an internal temperature of at least 165°F (74°C). Once reached, the meat should be moist, opaque, and hold its structure.

  • Poultry: 165°F (74°C) in the thickest part
