Tips for success
For the best flavor, choose a barbecue sauce you love, since it's the star of the dish. A hickory-smoked or brown sugar-based sauce works wonderfully.
If you prefer a spicier kick, add a few dashes of hot sauce or a pinch of cayenne to the sauce before pouring (though not shown in the video). You can also use a homemade sauce if you have a favorite recipe.
To achieve a caramelized, slightly charred exterior, transfer the cooked ribs to a baking sheet, brush with extra sauce, and broil for 2-3 minutes until the sauce bubbles and darkens.
Watch closely to avoid burning. This step is optional but adds a nice texture contrast. Leftover sauce from the slow cooker can be simmered on the stovetop to thicken further and served alongside.
Variations
- Spicy Chipotle Ribs: Stir 2 chipotle peppers in adobo sauce (finely chopped) and 1 tablespoon of adobo sauce into the barbecue sauce before pouring over the ribs. This adds a smoky, spicy kick. Adjust the amount to taste.
- Honey Garlic Ribs: Replace 1/2 cup of the barbecue sauce with 1/4 cup honey and 2 tablespoons soy sauce (or tamari for gluten-free). Add 3 minced garlic cloves for a sweet-savory glaze.
- Root Beer Ribs: Pour 1 cup of root beer over the ribs along with the barbecue sauce. The root beer adds sweetness and helps tenderize the meat. Cook as directed, then remove the ribs and simmer the sauce on the stovetop to reduce until thickened.
- Smoky Maple Ribs: Mix 2 tablespoons maple syrup and 1 teaspoon liquid smoke (if you like a smoky flavor) into the barbecue sauce. This adds a rich, woodsy sweetness that pairs perfectly with pork.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooked ribs in a single layer on a baking sheet, then transfer to a freezer-safe bag or container for up to 3 months.
- Reheat
- Reheat frozen ribs in a 350°F (175°C) oven, covered, for 25-30 minutes, or until heated through.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools.
To reheat, place the ribs in a baking dish, cover with foil, and warm in a 350°F (175°C) oven for 15-20 minutes, or microwave in 30-second bursts until heated through. The ribs also freeze well; see the freezer instructions below.
This recipe is perfect for making ahead. Assemble the ribs and sauce in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and cook on low as directed.
You may need to add 30-60 minutes to the cooking time if starting from cold. The cooked ribs also keep well in the refrigerator for up to 4 days, making them great for meal prep.
Serving ideas
Serve the ribs hot, straight from the slow cooker, with extra sauce spooned over the top. They pair beautifully with classic barbecue sides like coleslaw, baked beans, corn on the cob, or potato salad. For a low-effort meal, serve with a simple green salad and crusty bread to soak up the sauce.
For a game-day platter, arrange the ribs on a large board with pickles, sliced onions, and extra napkins. The ribs are messy but worth it. You can also shred the meat and serve it on slider buns with a spoonful of sauce for a fun twist. Leftover shredded pork is excellent in tacos, quesadillas, or over mac and cheese.

Slow-Cooker BBQ Ribs: Dump and Forget

Ingredients
- 2 racks baby back pork ribs (about 2 lb total)
- 2 cups barbecue sauce
Instructions
- Place the racks of baby back ribs in the slow cooker insert, meaty side up. If needed, cut the racks in half to fit in a single layer.
- Pour the barbecue sauce evenly over the ribs, covering the top surface completely. Use a spoon or brush to spread it into an even layer.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the meat is tender and easily pulls away from the bone. Do not lift the lid during the first 4 hours. Let it rest for 3 minutes before slicing.
- Insert a fork into the thickest part of the meat. It should slide in easily and the meat should begin to separate from the bone. The internal temperature should read at least 145°F (63°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 10 minutes. This allows the juices to redistribute and the sauce to thicken slightly.
- Using tongs, carefully transfer the ribs to a cutting board. Slice between the bones and serve on a warm platter, spooning extra sauce from the slow cooker over the top.
