Before you start

Before you begin, ensure your slow cooker is clean and positioned on a stable, heat-resistant surface near an electrical outlet. Have all your ingredients measured and ready to go.

Because you are using ground beef meatballs, there is no need for thawing, which makes this an excellent last-minute preparation. Verify that you have a serving platter or toothpicks ready if you plan to serve these as an appetizer, as the meatballs will be quite hot when they come out of the slow cooker.

Ingredients at a glance (4)
  • 24 ground beef meatballs
  • 1/2 cup bacon bits
  • 1 packet brown sugar seasoning
  • 1 cup barbecue sauce

Instructions

Layering the ingredients

  1. Assemble the ingredients
Place the ground beef meatballs in the base of your slow cooker, ensuring they are spread in an even layer across the bottom of the vessel.
Look for The meatballs should cover the bottom of the slow cooker insert evenly.
Tip Using a preheated slow cooker is not necessary for this recipe as the long cooking time ensures even heat distribution.

At this stage, you should see the ground beef meatballs neatly arranged in the base of the slow cooker. The layer should be relatively even to ensure that the heat is distributed efficiently once the cooking starts. Check that the base of your slow cooker is dry before adding the meatballs, and ensure your hands are clean after handling the components.

Adding flavor components

  1. Season and sauce
Scatter the bacon bits over the meatballs, then sprinkle the brown sugar seasoning packet evenly on top. Pour the barbecue sauce over the mixture to coat everything thoroughly.
Look for The sauce should cover the meatballs and bacon bits completely.
Tip Ensure the seasoning is distributed well to avoid clumps of flavor in one spot.

The bacon bits and seasoning packet should be scattered evenly over the meatballs, followed by a generous pour of barbecue sauce. The mixture should look visually appealing, with the sauce beginning to pool around the base.

Check that the seasoning is not clumped in one area so that every meatball receives a balanced amount of flavor during the cooking cycle.

Slow cooking cycle

  1. Slow cook and serve
Cover the slow cooker and cook on low for 4 hours until the meatballs reach an internal temperature of 160°F (71°C). Serve warm directly from the slow cooker.
Look for The sauce should be glossy and bubbling, with the meatballs steaming hot.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Stir the meatballs gently once halfway through cooking to ensure all pieces are evenly coated in the barbecue sauce.

Once the slow cooker is covered and the heat is on, the process is entirely hands-off. The meatballs will slowly thaw and absorb the barbecue sauce, while the bacon bits soften and release their smoky aroma. By the end of this phase, the kitchen should smell rich and savory, indicating that the flavors have successfully melded into the desired glaze.

Common mistakes

Avoid overfilling the slow cooker, as this can prevent the sauce from coating the meatballs evenly and may lead to uneven heating.

Additionally, resist the urge to lift the lid frequently during the cooking process, as each time you open the slow cooker, you lose heat and moisture, which can significantly increase the total cooking time and affect the final texture of the sauce and the meatballs.

How to tell it’s done

The meatballs are ready when they have reached an internal temperature of 160°F (71°C). At this point, the sauce should appear glossy, thick, and cling perfectly to the surface of the meatballs.

They will be steaming, tender, and easy to pierce with a toothpick. If you have extra time, you can leave them on the warm setting for an additional hour to allow the sauce to thicken further, but ensure you check the temperature to avoid overcooking the meat.

  • Ground meat: 160°F (71°C) in the thickest part
