Tips for success

For a deeper, more complex flavor, you can sear the beef roast in a hot skillet with a small amount of oil before placing it into the slow cooker. While this is an optional step, it helps to develop a rich, caramelized crust on the exterior of the beef, which adds another layer of depth to the final sauce that develops as it cooks.

If you prefer a thicker sauce, you can remove the meat after cooking and whisk in a small amount of cornstarch slurry (equal parts cornstarch and cold water) into the cooking liquid.

Simmer the liquid on the stove for a few minutes until it reaches your desired consistency. This creates a glossy, gravy-like sauce that clings beautifully to the shredded beef when served.

Variations

  • Spicy Banana Pepper Roast: Add a teaspoon of crushed red pepper flakes or a thinly sliced fresh jalapeño to the pot before cooking for an extra kick of heat that complements the tanginess of the banana peppers.
  • Root Vegetable Roast: Add two cups of peeled and chopped carrots or potatoes to the slow cooker at the beginning of the cooking time to create a complete one-pot meal that includes both the protein and side dish.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days in the refrigerator.
Freezer
Freeze the cooked, shredded beef in an airtight container or freezer bag for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently in a saucepan over medium-low heat with a splash of beef broth or water, or microwave in short intervals until heated through.

Allow any leftover roast to cool to room temperature for no more than two hours before transferring it to an airtight container. Keep the meat submerged in some of its cooking juices to prevent it from drying out while stored in the refrigerator.

Properly stored, the leftover roast will maintain its quality for up to three days, making it an excellent option for quick lunches or dinners throughout the week.

This dish is an excellent candidate for making ahead, as the flavors often improve after sitting for a day. You can assemble the ingredients in the slow cooker insert the night before and store it in the refrigerator.

When ready to cook, simply take it out of the fridge and start the slow cooker directly, adding about 30 minutes to the total cooking time to account for the colder starting temperature.

Serving ideas

Serve the roast warm, either sliced into thick pieces or shredded into larger chunks, with the banana peppers and softened onions spooned generously over the top.

This dish pairs excellently with mashed potatoes, roasted root vegetables, or a side of crusty bread to soak up the tangy, savory juices. A side of steamed green beans or a crisp garden salad can add a refreshing contrast to the richness of the beef.

For a more casual serving option, shred the beef and use it to fill warm hoagie rolls or sliders. Top with extra banana peppers and a slice of provolone or swiss cheese for a delicious, tangy beef sandwich. The juices can also be served on the side as an au jus for dipping, ensuring that every bite is packed with the vibrant, tangy flavor of the banana peppers.

Frequently asked questions

Can this be made in an oven instead of a slow cooker?
Yes, you can cook this in a Dutch oven at 300°F (150°C) for 3 to 4 hours. Ensure the lid is tight to trap the moisture and check that the internal temperature reaches 145°F (63°C) before serving.
Why does the beef turn out tough?
Tough beef usually indicates that the roast has not cooked long enough to break down the connective tissues. Ensure you are using a chuck roast and allow it to cook until it is fork-tender, which can sometimes take longer depending on the specific slow cooker model.
Is it necessary to use beef broth?
Beef broth adds depth and seasoning to the dish. If you do not have broth, you can use water, but you may need to increase the amount of salt and Italian seasoning to compensate for the lost flavor profile.

Ingredients

  • 3 lb beef chuck roast
  • 1 cup banana pepper rings
  • 1 large white onion, sliced
  • 2 tbsp Italian seasoning
  • 1 cup beef broth

Instructions

  1. Place the beef chuck roast into the bottom of the slow cooker insert. Scatter the banana pepper rings and sliced onions evenly over the top of the beef. Sprinkle the Italian seasoning over the vegetables and meat to ensure even flavor distribution throughout the cooking process.
  2. Pour the beef broth and the liquid from the banana pepper jar over the roast. Cover the slow cooker with the lid and set to cook on low for 8 hours or on high for 4 to 5 hours until the meat is fork-tender and reaches an internal temperature of at least 145°F (63°C). Let the meat rest for at least 3 minutes before serving.
  3. Once the roast is tender, carefully remove it from the slow cooker to a cutting board. Slice or shred the meat as desired. Serve with the warm banana peppers and onions spooned over the top.
