Tips for success

For a deeper flavor, you can sear the ribs in a hot skillet for a few minutes on each side before adding them to the slow cooker, though this is optional.

If you choose this step, ensure the skillet is very hot to get a nice crust without overcooking the center of the meat. This extra step adds a layer of complexity to the final dish but is not strictly necessary for a delicious result.

If you find the sauce is too thin at the end of the cooking cycle, you can easily thicken it. Carefully remove the ribs and transfer the cooking liquid to a small saucepan.

Bring it to a boil over medium-high heat and let it reduce until it becomes syrupy. This intensified balsamic reduction can then be drizzled over the ribs just before serving to add a final punch of flavor and a beautiful, shiny finish.

Variations

  • Spicy Balsamic Ribs: Add a teaspoon of red pepper flakes or a dash of hot sauce to the slow cooker at the beginning for a subtle heat that cuts through the sweetness of the sugar and balsamic.
  • Herb-Infused Ribs: Toss in two sprigs of fresh rosemary or thyme with the shallots before cooking to add an aromatic, earthy dimension that pairs wonderfully with the balsamic reduction.

Storage and make-ahead

Fridge
Keep leftovers in an airtight container for up to 3 days. Cool to room temperature for no more than 2 hours before refrigerating.
Freezer
Freeze in a freezer-safe bag or container for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat in a preheated oven at 300°F (150°C) until warmed through, or gently on the stovetop over low heat with a splash of water.

Store any leftover ribs in an airtight container in the refrigerator for up to three days. To keep the meat moist, ensure it is submerged in some of the balsamic glaze. When storing, allow the ribs and sauce to cool for no more than two hours at room temperature before placing them into the refrigerator to prevent bacterial growth.

These ribs are excellent for making ahead, as the flavors often deepen after sitting in the refrigerator overnight. You can cook them completely, let them cool, and then store them in the fridge. When ready to eat, simply reheat them gently on the stovetop or in the oven, adding a splash of water if the sauce has become too thick during storage.

Serving ideas

Serve these ribs warm with a side of creamy mashed potatoes or steamed vegetables to soak up the balsamic shallot glaze.

The richness of the pork pairs beautifully with simple sides that do not compete with the sweet and tangy profile of the meat. A crisp green salad with a light vinaigrette also provides a refreshing contrast to the hearty, glazed ribs.

When plating, spoon the caramelized shallots over the ribs and drizzle extra glaze from the bottom of the slow cooker. The visual appeal of the dark, glossy sauce against the tender pork makes for an impressive main course.

Ensure each serving includes a generous portion of the shallots, as they are a highlight of the dish and offer a sweet, soft texture that is truly delightful.

Frequently asked questions

Can this recipe be made with other cuts of pork?
Yes, this method works well with pork shoulder or pork chops, though cooking times may vary. Pork shoulder will take a similar amount of time, while thinner pork chops will cook much faster and should be monitored closely to prevent them from becoming dry.
Why is it important to let the meat rest?
Resting allows the internal juices to redistribute throughout the meat fibers. If the ribs are sliced immediately, the juices will run out, resulting in drier meat. A five-minute rest ensures every bite is succulent and flavorful.
Is it necessary to peel the shallots completely?
Yes, peeling the shallots completely ensures they become tender and buttery during the cooking process. Leaving the papery skins on can create an unpleasant texture and make it difficult to enjoy the shallots as part of the final glaze.

Ingredients

  • 2 lb pork ribs, cut into serving pieces
  • 6 whole shallots, peeled
  • 1/3 cup brown sugar
  • 3/4 cup balsamic vinegar

Instructions

  1. Place the raw pork ribs in the bottom of the slow cooker insert. Scatter the peeled whole shallots evenly over the ribs. Sprinkle the brown sugar over the top of the meat and shallots, then pour the balsamic vinegar over everything.
  2. Cover the slow cooker with the lid and set to low. Cook for 8 hours until the ribs are extremely tender and the balsamic sauce has reduced slightly. Ensure the internal temperature of the pork reaches 145°F (63°C) and let the meat rest at least 3 minutes before serving.
  3. Carefully remove the ribs from the slow cooker and transfer them to a serving plate. Let the meat rest for at least 5 minutes before serving to allow the juices to redistribute properly. Drizzle with the remaining balsamic shallot reduction from the pot.
