Before you start

Before starting, ensure that all your vegetables are washed, peeled, and diced into uniform small cubes to promote even cooking. Have your measuring cups ready to accurately portion the rice and water.

Clear a workspace near your slow cooker, making sure it is placed on a heat-resistant surface away from any overhanging cabinets or curtains. Check that your slow cooker insert is clean and dry before you begin the layering process to ensure the best possible results.

Ingredients at a glance (5)
  • 1 cup white rice
  • 1 cup diced pumpkin
  • 1 cup diced carrots
  • 1 tsp dried thyme
  • 2 cups water

Instructions

Layering the ingredients

  1. Layering the ingredients
Add the raw white rice to the bottom of the slow cooker insert. Distribute the diced pumpkin and diced carrots evenly over the layer of rice. Sprinkle the dried thyme over the vegetables to ensure even flavor distribution.
Look for Rice is at the bottom with vegetables layered clearly on top.
Tip Avoid stirring the ingredients at this stage to keep the layers distinct for even cooking.

At the end of this phase, you should have a clear, distinct layer of rice at the bottom of the cooker with the vegetables evenly scattered on top. The dried thyme should be visible as a light dusting over the vegetables.

Ensure the ingredients are not packed down too tightly, as this allows the steam to circulate properly during the cooking process. Everything should look neat and ready for the water addition.

Adding moisture and cooking

  1. Adding moisture and cooking
Pour the water carefully over the rice and vegetable layers. Secure the lid on the slow cooker. Set the slow cooker to low heat and allow the pilaf to cook for approximately 3 hours, or until the rice is tender and the liquid is absorbed.
Look for Water covers the rice completely but does not overflow the slow cooker.
Tip Use warm water if you want to speed up the initial heating process of the slow cooker.

Once the water is added, the rice should be fully submerged. The slow cooker is now set to begin the transformation. During this phase, the aroma of the thyme will begin to fill the kitchen, and you should see steam rising from the vent. Do not lift the lid during this time, as the internal pressure and moisture levels are critical for the rice to steam correctly and evenly.

Serving the pilaf

  1. Serving the pilaf
Once the cooking time has elapsed, switch off the slow cooker and allow the pilaf to rest for 10 minutes with the lid on. Gently fluff the rice with a fork before plating.
Look for Rice is fluffy and vegetables are tender when pierced with a fork.
Tip Gently fluffing with a fork prevents the rice grains from becoming mushy.

After the resting period, the pilaf should look glossy and inviting. The rice grains should be distinct and fluffy, and the pumpkin and carrots should appear vibrant and tender. When you fluff the mixture with a fork, it should feel light. If the rice looks dry, you can add a tiny splash of warm water and let it sit for a few more minutes before serving.

Common mistakes

A common mistake is stirring the ingredients before the cooking process, which disrupts the layering and can lead to unevenly cooked rice. Avoid opening the lid frequently, as this releases the trapped steam necessary for cooking the rice through.

Using too much water can result in a gummy texture, while too little will leave the rice undercooked or scorched at the bottom. Always measure your water carefully and stick to the recommended proportions for the best outcome.

How to tell it’s done

The pilaf is done when the rice has absorbed all the liquid and is tender to the bite, not crunchy or mushy. The vegetables should be soft enough to be easily pierced with a fork but still hold their shape.

Because slow cookers vary in temperature, check the consistency at the 2.5-hour mark. If there is still excess water, continue cooking for another 30 minutes, checking every 10 minutes until the desired texture is reached.
