Before you start

Before beginning the assembly, ensure the slow cooker insert is clean and dry. Prepare the chicken by patting it dry with paper towels, which helps the spices adhere better to the surface. Measure out the brown sugar, cinnamon, and apple cider in advance so that the assembly process is smooth and quick.

Having all ingredients ready on the counter streamlines the process, allowing for the quick jump-cut assembly shown in the preparation phase. Double-check that your slow cooker is plugged into a functional outlet and set to the appropriate heat level.

Ingredients at a glance (4)
  • 2 lb chicken thighs, skinless and boneless
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 cup apple cider

Instructions

Preparation and seasoning

  1. Prepare the slow cooker
Place the raw chicken thighs into the bottom of the slow cooker insert. Ensure they are arranged in an even layer to promote uniform cooking throughout the process.
Look for Chicken is arranged at the base of the insert.
Tip Removing excess fat from the chicken thighs before cooking results in a cleaner sauce.
  2. Add seasonings
Sprinkle the brown sugar evenly over the chicken pieces. Follow this by dusting the ground cinnamon over the chicken, ensuring it is distributed for balanced flavor.
Look for Brown sugar and cinnamon are visible on the chicken.
Tip Use a light hand when sprinkling to avoid clumping of the spices.

At the end of this phase, the chicken should be neatly arranged at the bottom of the slow cooker, with the brown sugar and cinnamon evenly distributed over the surface. The chicken should look clean and ready for the liquid. Ensure no ingredients are spilled on the rim of the insert, as this can burn during the long cooking process. Everything should be in place, and the slow cooker is ready to be covered and turned on.

Slow cooking process

  1. Add liquid and cook
Pour the apple cider over the seasoned chicken. Cover the slow cooker with its lid. Set the appliance to cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken reaches an internal temperature of 165°F (74°C).
Look for Liquid surrounds the chicken entirely.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not lift the lid during the first few hours to maintain heat.

During the cooking phase, the apple cider should be bubbling gently around the chicken. The kitchen will begin to smell aromatic as the cinnamon and cider meld with the juices from the chicken.

At the end of the cooking time, the liquid should have reduced slightly, and the chicken will be very tender. Check that the internal temperature has reached 165°F (74°C) before proceeding to the shredding stage to ensure safety and perfect texture.

Shredding and final prep

  1. Shred and serve
Remove the cooked chicken from the slow cooker and transfer it to a plate. Use two forks to shred the meat into bite-sized pieces. Allow the shredded chicken to rest for at least 5 minutes before serving.
Look for Chicken pulls apart easily into strands.
Tip If the sauce is too thin, simmer it in a pan for a few minutes to reduce it before tossing with the meat.

Once the chicken is removed to a plate, it should be soft enough to shred effortlessly using two forks. The meat should appear glossy and succulent. Allow the shredded chicken to sit for at least 5 minutes to absorb any remaining juices on the plate. The final result should be a tender, uniform pile of pulled chicken that is ready to be served or incorporated into other meals, ensuring a consistent and satisfying texture throughout.

Common mistakes

A common error is overcrowding the slow cooker, which can prevent uniform cooking. Ensure the chicken pieces are spread out in a single layer rather than stacked deeply. Another mistake is lifting the lid too frequently, which causes heat loss and extends the cooking time significantly.

Avoid adding too much liquid, as the chicken releases its own juices during the process; follow the recipe amounts to ensure the sauce has the right consistency. Finally, do not forget to let the meat rest before shredding.

How to tell it’s done

The chicken is considered fully cooked when it reaches an internal temperature of 165°F (74°C). At this point, the meat should be opaque, tender, and easily pulled apart with two forks.

If the chicken still feels firm or resists shredding, it likely requires additional cooking time. Always check the thickest part of the largest thigh to ensure accuracy, as cooking times can vary based on the specific model and size of the slow cooker used.

  • Poultry: 165°F (74°C) in the thickest part
