Tips for success
For an even richer flavor, you can sear the short ribs in a hot skillet with a little oil before adding them to the slow cooker.
This is optional, but it adds a deep, caramelized crust that enhances the final dish. If you do sear them, you may want to reduce the cooking time by about 30 minutes since the meat will have a head start.
To make the sauce extra glossy, you can transfer the sauce from the slow cooker to a saucepan after the ribs are done and simmer it on the stovetop until it thickens to your liking.
This is a great trick if you prefer a very thick, sticky glaze. Just be sure to let the sauce cool slightly before serving, as it will be very hot.
Variations
- Spicy Chipotle: Use a chipotle BBQ sauce and add 1-2 minced chipotle peppers in adobo to the pot. The smoky heat will complement the sweet apples and cider, giving the ribs a gentle kick.
- Honey Garlic: Replace the BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 2 tbsp tomato paste. Omit the apples and cider for a different flavor profile.
- Bourbon Brown Sugar: Add 1/4 cup bourbon and 2 tbsp brown sugar to the sauce mixture. The bourbon adds a smoky sweetness, and the brown sugar helps create a thick, sticky glaze.
- Smoky Maple: Use a maple-flavored BBQ sauce and add 2 tbsp pure maple syrup. The maple pairs beautifully with the apple cider, creating a deeply autumnal flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooked ribs in a freezer-safe container with sauce for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of cider or water if needed. Or warm in a 350°F (175°C) oven for 15-20 minutes.
Leftover ribs can be stored in an airtight container in the refrigerator for up to 4 days. The sauce will solidify when cold, but it will re-liquefy when reheated. To keep the meat moist, store it with some of the sauce. Reheat gently in the microwave or on the stovetop until heated through.
This dish is an excellent make-ahead meal. Cook the ribs up to 2 days in advance, then cool and refrigerate in the sauce. When ready to serve, reheat gently on the stovetop or in a 350°F (175°C) oven until hot. The flavors will continue to meld, and the meat will become even more tender.
Serving ideas
Serve the ribs hot, with plenty of the braised apples and sauce spooned over the top. The sweet-tangy sauce pairs beautifully with creamy mashed potatoes, polenta, or buttered egg noodles.
A side of roasted vegetables or a crisp green salad with a simple vinaigrette balances the richness. For a true Southern touch, serve with cornbread or warm biscuits to soak up every drop of sauce.
These ribs are also wonderful shredded and piled onto soft rolls for a pulled-beef sandwich. The apples and sauce act as a built-in slaw-like topping.
If you have leftovers, use them in tacos, over rice, or in a hearty pasta bake. The possibilities are endless, and every bite will taste just as good as the first.

Slow Cooker Apple Cider BBQ Short Ribs: Set It and Forget It

Ingredients
- 3 lb bone-in English-cut beef short ribs
- 2 Honeycrisp apples, sliced
- 1 cup unfiltered apple cider
- 1 1/2 cups thick Kansas City-style BBQ sauce
Instructions
- Place the beef short ribs in the slow cooker in a single layer, bone side down. Scatter the sliced apples evenly over the ribs. Pour the apple cider around the edges of the pot, being careful not to rinse the apples off the meat.
- Pour the BBQ sauce evenly over the ribs and apples, using a spatula to spread it into an even layer. Do not stir—the sauce will melt and combine with the cider as it cooks.
- Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the meat is fork-tender and nearly falling off the bone. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Test the ribs with a fork: the meat should pull apart easily and show no resistance. If not yet tender, continue cooking in 30-minute increments until it is. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to firm up slightly for easier handling.
- Using tongs or a carving fork, carefully lift the ribs from the slow cooker, letting excess sauce drip back. Place on a serving platter or individual plates. Spoon some of the cooked apples and extra sauce over the top. Let it rest for 3 minutes before slicing.
